Create a wonderful Japchae dish using leftover vegetables and ingredients from your pantry! It’s a delicious meal, perfect not just for special occasions but also for everyday enjoyment. Japchae is a fantastic choice for holiday gatherings or when hosting guests, and with this easy and detailed recipe, anyone can succeed.
Main Ingredients- 1/2 medium onion (thinly sliced)
- A small piece of carrot (about 1/4, thinly julienned)
- 1/4 green bell pepper (seeds removed, thinly sliced)
- 1 handful of glass noodles (about 100g)
- 150g beef (e.g., bulgogi or japchae cut)
- 2 shiitake mushrooms (rehydrated and julienned)
- A small amount of wood ear mushrooms (rehydrated and prepared)
Japchae Seasoning- 3 Tbsp soy sauce
- 1/2 Tbsp sesame oil
- 1/3 Tbsp minced garlic
- 1/2 Tbsp plum extract (adjust sweetness to taste)
- 1/3 Tbsp ginger paste or minced ginger

Cooking Instructions
Step 1
First, gently pat the beef dry with paper towels to remove excess blood. Place the beef in a bowl with the julienned shiitake mushrooms. Add 1 tablespoon of soy sauce and a little sesame oil (about 1/4 tablespoon) and marinate by gently mixing. You don’t need to marinate for a long time; just while you prepare the vegetables is sufficient.
Step 2
Now, bring a pot of water to a boil and add the rehydrated wood ear mushrooms and glass noodles. Cook for about 8 minutes. Once the glass noodles are translucent and cooked to your liking, drain them using a colander. To prevent the cooked noodles from sticking together, toss them with about 1/2 teaspoon of sesame oil.
Step 3
Heat a pan over medium-high heat and add the marinated beef and shiitake mushrooms. Stir-fry until the beef is mostly cooked. Add the rehydrated wood ear mushrooms and continue to stir-fry. The fragrant mushrooms and savory beef will start to combine.
Step 4
Add the prepared vegetables – onion, carrot, and green bell pepper – to the pan and stir-fry them together. Quickly stir-fry over high heat until the vegetables are slightly tender but still crisp to maintain their crunch. Gently mix all the ingredients with chopsticks or a spatula.
Step 5
Finally, add the cooked and tossed glass noodles to the pan. Add the remaining seasoning ingredients (soy sauce, sesame oil, minced garlic, plum extract, ginger paste) and stir-fry everything together until the noodles and vegetables are evenly coated with the sauce. Finish with a drizzle of sesame oil for extra aroma and flavor. Serve immediately while warm for the best taste!
