  • 1 Tbsp Fish Sauce (or soy sauce/anchovy sauce)
  • 1 Tbsp Toasted Sesame Seeds

Cooking Instructions

Wash the zucchini thoroughly, trim off the ends, and slice it into round, flat pieces about 0.5 cm thick. Slicing them too thinly might cause them to break apart, so aim for a moderate thickness.

Sprinkle the sliced zucchini evenly with 0.5 Tbsp of salt and let it cure for at least 10 minutes. This process draws out excess moisture, preventing the zucchini from becoming watery when pan-fried and improving its texture.

Gently rinse the cured zucchini under running water and drain them in a colander. Pat them dry with paper towels to remove any excess moisture, which will help achieve a cleaner sear. Heat 1 Tbsp of perilla oil and 1 Tbsp of cooking oil in a pan over medium heat. Place the prepared zucchini slices in the pan and sear them until golden brown on both sides, flipping occasionally. Be mindful of the heat to prevent burning.

Once the zucchini is nicely seared and golden brown, push them to one side of the pan or temporarily set them aside. Add all the seasoning ingredients (0.5 Tbsp red pepper flakes, 1 Tbsp fish sauce) to the pan and lightly sauté them to release their aroma.
