Pan-Fried Mochi Cakes with Sweet Red Bean Paste

Introducing a pan-fried mochi cake recipe. These cakes offer a delightful contrast of a slightly crisp exterior and a chewy interior, complemented by a sweet red bean paste filling that appeals to all ages. Made easily with glutinous rice flour, they are especially delicious when enjoyed warm.

- 160g Sweet Red Bean Paste
- 200g Dry Glutinous Rice Flour
- 150ml Warm Water

Step 1
First, prepare the 160g of sweet red bean paste and roll it into small balls, about 3-4 cm in diameter. Shaping the paste nicely will help it distribute evenly inside the mochi.

In a bowl, place the 200g of dry glutinous rice flour. Gradually add the 150ml of warm water while mixing. Using warm water helps the glutinous rice flour bind well and achieve a chewy texture. Mix with a spatula until it starts to clump, then knead by hand to form a smooth dough.
Step 3
Divide the smooth glutinous rice flour dough into portions similar in size to the red bean paste balls, and roll them into spheres. To prevent sticking, you can lightly dust your hands with flour or lightly wet them while working with the dough.
Step 4
Gently press the center of each glutinous rice dough ball with your finger to create a hollow for the red bean paste filling. Be careful not to press too thin, as the filling might leak out. Aim for a moderate thickness.
Step 5
Carefully place the prepared red bean paste ball into the hollow you made in the glutinous rice dough.
Step 6
Gather the glutinous rice dough around the red bean paste to form a round shape again, ensuring the filling is completely enclosed. Pinch the edges together to seal securely, preventing the paste from leaking out during cooking.
Step 7
Gently flatten the round mochi cake by pressing it down with your palm, similar to how you would flatten a hotteok (Korean sweet pancake). Press lightly to avoid tearing the dough. Ensure the surface is evenly spread.
Step 8
Heat a non-stick pan over low heat without adding any oil. Place the flattened mochi cakes onto the pan. Cook over low heat to ensure they cook through and develop a nice golden-brown color without burning. Flip them occasionally and cook for about 5-7 minutes, or until golden brown on both sides.
