How to Make Delicious Oyster Rice in a Pot
Try making rice with oysters, which are in season right now. It’s packed with nutrients and absolutely delicious. This recipe is perfect for a nutritious and flavorful meal.
Main Ingredients- 1 cup short-grain rice
- 200ml water (or amount for cooking rice)
- 200g fresh oysters
- 100g radish
- 50g carrot
- 1 sheet (10cm) dried kelp (dashima)
- 1 Tbsp salt (for washing oysters)
- 1 Tbsp sesame oil (for coating oysters)
Seasoning Sauce Ingredients- 3 Tbsp all-purpose soy sauce
- 1 Tbsp red pepper flakes
- 1 Tbsp plum extract
- 1 Tbsp sugar
- 1 tsp minced garlic
- 1 small green chili, finely minced
- 1 Tbsp sesame oil
- 1 Tbsp toasted sesame seeds
- 3 Tbsp all-purpose soy sauce
- 1 Tbsp red pepper flakes
- 1 Tbsp plum extract
- 1 Tbsp sugar
- 1 tsp minced garlic
- 1 small green chili, finely minced
- 1 Tbsp sesame oil
- 1 Tbsp toasted sesame seeds
Cooking Instructions
Step 1
First, prepare 1 cup of short-grain rice.
Step 2
Rinse the rice under running water two to three times until the water runs clear. Place the rinsed rice in a bowl, add 200ml of cold water, and let it soak for about 30 minutes. Soaking the rice ensures it cooks up fluffy and delicious. After soaking, drain the rice thoroughly in a sieve.
Step 3
Prepare the fresh oysters by shucking them if necessary and rinsing them thoroughly. In a bowl, add the oysters. Dissolve 1 Tbsp of salt in 200ml of water to make a saltwater solution, then pour it over the oysters. Gently stir the oysters with chopsticks or your hands a couple of times to remove any grit or impurities. Drain the washed oysters well.
Step 4
Wash the radish and carrot, then peel them. Julienne them into thin strips that will look nice on top of the oyster rice.
Step 5
In a separate bowl, combine 3 Tbsp of all-purpose soy sauce, 1 Tbsp red pepper flakes, 1 Tbsp plum extract, 1 Tbsp sugar, 1 tsp minced garlic, 1 finely minced green chili, 1 Tbsp sesame oil, and 1 Tbsp toasted sesame seeds. Mix all the ingredients well to create a flavorful seasoning sauce that will enhance the taste of your oyster rice.
Step 6
Now, get your pot ready for cooking the rice. Spread the drained soaked rice evenly at the bottom of the pot. Pour in the 200ml of water (or your usual amount for cooking rice). The water should just cover the rice.
Step 7
Place the 10cm sheet of dried kelp on top of the rice. Cooking rice with kelp adds a wonderful depth of flavor. Place the pot over high heat and bring it to a boil.
Step 8
Once the water begins to bubble vigorously, gently stir the rice with a spatula to prevent it from sticking to the bottom. Be careful not to let the water boil over.
Step 9
Immediately after stirring, cover the pot with a lid and reduce the heat to medium. Let it cook for about 1 to 2 minutes. Cook until the water level has reduced and the rice is about halfway cooked.
Step 10
Lift the lid and artfully arrange the julienned radish and carrot over the rice. Take the drained oysters and toss them gently with 1 Tbsp of sesame oil. This coating helps the oysters retain their plump texture and prevents them from becoming too fishy while cooking. Place the coated oysters on top of the vegetables, then cover the pot again.
Step 11
Keep the heat on medium and continue to cook for about 7 minutes. This allows the oysters to cook through and all the ingredients to become tender. Adjust the heat as needed to prevent the rice from burning.

After 7 minutes, turn off the heat completely. Keep the lid on and let the rice steam for 3 minutes. This resting period allows the moisture to distribute evenly, resulting in a wonderfully moist and delicious oyster rice.
