  • 1/2 cup white wine
  • 10 cloves garlic
  • 1 segment of green onion (leek can be substituted)
  • 5 Tbsp olive oil
  • Pinch of salt
  • Pinch of black pepper
  • Parmesan cheese, to taste
  • Pinch of dried parsley
  • 1 dried Cheongyang chili pepper
  • 1 cup pasta water

Cooking Instructions

Step 1

Today, we’re making a seafood pasta using whole wheat pasta and fresh seasonal oysters. This dish is packed with the delicious flavor of the sea.

Step 1

Step 2

First, let’s prepare the aromatics. Thinly slice the 10 cloves of garlic. Finely chop the green onion. Crumble 1 dried Cheongyang chili pepper for a touch of heat.

Step 2

Step 3

Gently wash the fresh oysters with a bit of coarse sea salt, handling them carefully. Rinse them about three to four times until clean. Drain them thoroughly in a colander to remove excess water.

Step 3

Step 4

Bring a large pot of generously salted water to a rolling boil. Add the whole wheat pasta and cook for about 8 to 10 minutes, or according to package directions, tasting for doneness. I prefer to cook mine a bit longer for a softer texture.

Step 4

Step 5

I personally like my pasta cooked thoroughly, so I usually boil it for over 10 minutes. Adjust the cooking time to your preference.

Step 5

Step 6

Before draining the pasta, reserve about 2 cups of the starchy pasta water. This will be crucial for creating a silky sauce.

Step 6

Step 7

In a large skillet, heat a generous amount of olive oil over medium-low heat. Add the sliced garlic, chopped green onion, and crumbled dried chili pepper. Sauté until fragrant.

Step 7

Step 8

Continue to sauté until the garlic is fragrant and lightly golden, and the spicy aroma from the chili pepper fills the air. This step infuses the oil with wonderful flavors.

Step 8

Step 9

Add the drained oysters to the skillet and stir-fry quickly. Pour in the 1/2 cup of white wine over high heat and cook for just a minute. This helps to cook the oysters and add a depth of flavor without making them tough.

Step 9

Step 10

Pour in 1 cup of the reserved pasta water.

Step 10

Step 11

Once the sauce begins to simmer, add the cooked pasta to the skillet. Toss everything together, allowing the pasta to absorb the flavors. Add more pasta water as needed to achieve your desired sauce consistency. Season with salt to taste.

Step 11

Step 12

Finally, plate the pasta and generously sprinkle with Parmesan cheese. Finish with a pinch of black pepper and dried parsley for a beautiful and delicious presentation.
