I made delicious oyster pancakes using fresh, seasonal oysters. The unique, refreshing taste and tender texture of oysters create a palate-stimulating dish. This time, I only used pancake mix, which made it a bit too salty. Fortunately, my daughter, who is the only one in our family who likes oysters, enjoyed them very much. Next time, I’ll go back to my usual method of mixing half pancake mix and half flour. Main Ingredients

  • 200g fresh oysters
  • 1 cup pancake mix (buchim garu)
  • 2 eggs
  • A small amount of green onions or scallions, finely chopped
  • Olive oil or cooking oil, as needed

Cooking Instructions

Step 1

Gently rinse the fresh oysters in a colander under running water to remove any debris. Swish them around gently with your hands to clean. After rinsing, it’s best to pat them dry thoroughly with paper towels or a clean cloth to remove as much moisture as possible. Excess water can prevent the batter from adhering well and make the pancake soggy.

Step 2

In a clean bowl, crack the 2 eggs and whisk them thoroughly with a fork or whisk until smooth. Beating the eggs evenly will help create a thin and uniform coating on the oysters.

Step 3

Coat the drained oysters with the pancake mix. Gently shake or roll the oysters to ensure an even coating of the flour mixture on each oyster. Tap off any excess powder.

Step 4

Dip the floured oysters into the beaten egg mixture, ensuring they are fully coated. Heat a generous amount of olive oil in a pan over medium-low heat. Carefully place the coated oysters in the pan and cook until golden brown and slightly crispy on both sides. The egg coating should be cooked through, and the oysters should become plump and tender. Adding chopped green onions at this stage will enhance the color and flavor. Be mindful of the heat to prevent burning.

Step 5

Arrange the beautifully cooked oyster pancakes on a serving plate. They are best enjoyed warm to experience the fresh oyster flavor and the delightful texture. You can also serve them with a dipping sauce made from soy sauce and vinegar, if desired.
