I’m posting this recipe late today, as I only finished cooking it at night. After tidying up the kitchen and installing blinds, I wondered what I had done all day! Regardless, I was busy. So, I rummaged through the fridge looking for something simple to make and found some Vienna sausages, which inspired me to create these skewers. This recipe is perfect for a quick snack or a delightful appetizer.

First, cut the scallions into pieces similar in size to the Vienna sausages. Then, thread the scallions, Vienna sausages, and cheese rice cakes onto skewers in an alternating pattern. Cutting the ingredients to similar sizes ensures even cooking and makes the skewers look more appealing.

It’s best to score the Vienna sausages before skewering them, as this helps the sauce penetrate better and makes them look prettier when cooked. If you forget, you can still carefully score them after skewering.

Traditionally, teriyaki sauce is delicious for glazing these skewers, but I wanted to create a unique flavor using sauces I had on hand. Rummaging through my fridge, I found ketchup, honey mustard, and tonkatsu sauce. For something different, I noticed a ‘Wasabi-Mayo Stir-fried Noodles Soy Sauce’ which caught my eye. I wondered how it would taste brushed onto these skewers and decided to use it. (If you don’t have this specific sauce, you can mix 2 Tbsp soy sauce, 1 Tbsp mayonnaise, and a pinch of wasabi to create a similar glaze.)

Curious about the flavor of the wasabi-mayo soy sauce, I sprinkled a little salt over the skewers to enhance the taste. Salt helps balance the overall flavors and adds umami. Feel free to adjust the amount of salt to your preference.

Now it’s time to bake them in the oven. Line an oven pan with parchment paper and place the skewers inside. Bake in a preheated oven at 180°C (350°F) for about 20 minutes. Using parchment paper prevents sticking and makes cleanup much easier.

After 20 minutes, the skewers are nicely browned. Honestly, I wish I had baked them a little longer for a more caramelized appearance, but I took them out a bit too soon. If I had moved them to the upper rack and baked for just 5 more minutes, they would have had a more beautiful color. Next time, I’ll be sure to watch the time more closely!
