To make sure no leftover vegetables go to waste, I decided to make an oven-baked dish by wrapping them with pork shoulder, typically used for bulgogi. This recipe is not only delicious but also a fantastic way to use up those stray veggies in your fridge. Enjoy this flavorful and resourceful meal!
Main Ingredients- Pork shoulder 350g
Marinade- 1 Tbsp plum extract (maesilcheong)
- 1 tsp fish sauce (aekjeot)

Cooking Instructions
Step 1
Start by preparing 350g of pork shoulder. In a bowl, combine the pork with the marinade ingredients: 1 tablespoon of plum extract, 1 teaspoon of fish sauce, 1 tablespoon of olive oil, 1/2 teaspoon of minced garlic, and a pinch of black pepper. Mix well to coat the pork evenly, then let it marinate at room temperature for about 10 minutes.
Step 2
Next, prepare your assorted leftover vegetables and fruits. Cut them into bite-sized pieces that are easy to wrap around the pork and enjoyable to eat. You can use a variety of vegetables, but try to cut them into manageable sizes so they cook evenly with the pork.

Lightly coat the prepared vegetables and fruits with a thin layer of flour. This helps the pork adhere better and prevents the vegetables from releasing too much moisture during cooking, ensuring a better texture.

Now, take the marinated pork shoulder slices and carefully wrap them around the prepared vegetables and fruits. For leafy greens like baby bok choy, you can use them to cover the pork, adding a nice layer of flavor and texture.

Feel free to combine different vegetables and fruits to create your desired mix of flavors and textures. For instance, sweet pineapple, crisp onion, soft pumpkin, and tangy tomato make a wonderful combination. You can also include ingredients like tofu if you wish.

Arrange the pork-wrapped ingredients attractively in an oven-safe dish or baking tray. Lightly spray or brush the surface with olive oil for a golden-brown, delicious finish.

Place the dish into a preheated oven to bake. Cooking times and temperatures can vary depending on your oven model, so use the provided temperature as a guideline and check for doneness periodically. (The oven used for this recipe is quite old.)

I enjoyed it without any dipping sauce, but if you prefer, you can make a simple one: mix soy sauce, vinegar, and plum extract in a 1:1:1 ratio, adding a little sesame oil, perilla oil, and chili powder.
