Don’t throw away that leftover cabbage! Transform it into a delicious Okonomiyaki-style cabbage pancake with this simple recipe. It’s a hearty meal or snack that everyone, from kids to adults, will love.
Main Ingredients- 1/4 head of cabbage, thinly shredded
- 1 small onion, finely chopped
- 3 strips of bacon, cut into bite-sized pieces
- 5 Tbsp corn kernels (drain canned corn)
- Bonito flakes (katsuobushi), for generous topping
- Teriyaki sauce, to taste
- Mayonnaise, to taste

Cooking Instructions
Step 1
Gently separate the shredded cabbage if it’s clumped. Soak it in cold water for about 10 minutes to enhance its crispiness. Drain thoroughly using a sieve.

In a bowl, combine the pancake mix and tempura flour. Add the egg and gradually pour in the water while whisking with a whisk or chopsticks until smooth and lump-free. The batter should be thinner than pancake batter, with a flowing consistency.

Add the drained cabbage, finely chopped onion, and cut bacon to the prepared batter. Gently mix everything together, ensuring the ingredients are evenly coated with the batter.

Prepare the corn kernels, which are a favorite among children. If using canned corn, drain it well before adding it to the batter. Lightly mix all ingredients. You won’t need to add salt, as the bacon and teriyaki sauce will provide sufficient flavor.

Heat a pan over medium-low heat and add a generous amount of cooking oil. Ladle about two scoops of the batter onto the pan, spreading it out evenly into a round shape. Ensure it’s not too thin.
