Nutty & Tender Fern Brake Stir-fry with Perilla Seeds

A Nutritious Fern Brake Stir-fry Flavored with Perilla Seeds

Often reserved for holiday feasts, fern brakes are a delicious vegetable that can be enjoyed year-round. My son particularly loves this dish, so I find myself making it quite often! Today, I’ve prepared it generously seasoned with nutty perilla seed powder for an extra layer of flavor and texture.

Main Ingredients
  • 300g prepared fern brakes
  • 1.5 Tbsp soup soy sauce (guk-ganjang)
  • 1/2 Tbsp minced garlic

Seasonings & Others
  • 1 Tbsp perilla oil
  • 1/3 cup chopped green onion
  • 1 Tbsp dried anchovy powder
  • 1 Tbsp dried shiitake mushroom powder
  • 1/3 cup water
  • 1 red chili pepper (seeds removed and thinly sliced)
  • 3 Tbsp perilla seed powder

Cooking Instructions

Step 1

First, prepare the fern brakes. If using dried fern brakes, soak and boil them until tender, then drain. Cut the prepared fern brakes into bite-sized pieces, about 3-4 cm long. In a bowl, combine the cut fern brakes with 1.5 Tbsp of soup soy sauce and 1/2 Tbsp of minced garlic. Gently mix and marinate for a short while to let the flavors meld.

Step 2

Heat 1 Tbsp of perilla oil in a pan over low heat. Add the chopped green onions and stir-fry slowly until fragrant and golden brown. This process creates ‘pa-ki-reum’ (green onion oil), which adds a wonderful depth of flavor to the dish.

Step 3

Add the marinated fern brakes to the pan with the fragrant green onion oil and stir-fry briefly. Sprinkle in 1 Tbsp of dried anchovy powder and 1 Tbsp of dried shiitake mushroom powder. Pour in 1/3 cup of water. Stir everything together well, then cover the pan with a lid and let it simmer over medium-low heat until the fern brakes are tender.

Step 4

Continue to simmer, allowing the liquid to reduce until it’s slightly saucy. This is where the fern brakes will absorb all the delicious flavors.

Step 5

Once the liquid has reduced, add the thinly sliced red chili pepper for a hint of color and mild spice. Then, generously add 3 Tbsp of perilla seed powder, the star ingredient for that rich, nutty taste. Adding it towards the end preserves its fresh, nutty aroma.

Step 6

Gently stir everything together to combine the perilla seed powder and chili pepper with the fern brakes. Ensure the seasoning is evenly distributed. Your delicious and nutty fern brake stir-fry is now complete! Serve warm with a side of rice.
