Nutty Sweet Potato Bread
Super Easy Nutty Sweet Potato Bread Made with the King of Root Vegetables!
Sweet potato, sugar, eggs, and nuts – that’s it! Truly simple sweet potato bread.
Ingredients- 3 medium-sized sweet potatoes
- 2 eggs
- 50 grams sugar (approx. 4 Tbsp)
- 1 bag mixed nuts (approx. 50g)
Cooking Instructions
Step 1
Wash the sweet potatoes thoroughly, then place them in an air fryer set to 180°C (350°F) for about 30 minutes, or until tender when pierced with a fork. They should be easily pierced.
Step 2
While the sweet potatoes are cooking, carefully separate the egg yolks from the whites. Place the egg whites in a clean bowl, ready to be whisked.
Step 3
Gradually add the 50 grams of sugar to the egg whites in three additions, whisking continuously to create stiff peaks. Start whisking gently, then increase speed as the mixture thickens. The meringue should hold its shape without collapsing.
Step 4
Your meringue is ready when the tips stand straight up when you lift the whisk. It should look glossy and firm!
Step 5
Prepare the mixed nuts by roughly chopping them or leaving them whole, according to your preference. Chopping them into smaller pieces can make slicing the bread easier later.
Step 6
Once the sweet potatoes are cooked and still warm, peel them. Place the warm sweet potatoes in a bowl with the 2 egg yolks. Mash them together thoroughly using a fork or a masher until you have a smooth, lump-free sweet potato puree.
Step 7
Gently fold the stiff meringue and the prepared nuts into the mashed sweet potato mixture. Use a spatula to mix, being careful not to deflate the meringue. Mix just until combined to maintain the airy texture.
Step 8
Line a bread pan or oven-safe dish with parchment paper. Carefully pour the sweet potato batter into the lined pan and smooth the top. Decorate with your favorite berries (like blueberries or raspberries) or additional nuts on top.
Step 9
Bake in a preheated oven at 180°C (350°F) for approximately 55 minutes. If the top starts browning too quickly, you can loosely cover it with aluminum foil during baking. Check for doneness by inserting a skewer into the center; it should come out clean. Let the bread cool completely on a wire rack before serving and enjoying!
