This walnut simmer was a frequent side dish I made for my children when they were young, ensuring they got at least one bite of its goodness. The combination of savory walnuts, aromatic garlic, and a touch of sweetness makes it a perfect accompaniment to rice. Enjoy this nutritious and flavorful treat!

Main Ingredients

  • 150g Walnuts (halves or pieces)
  • 50g Dried Figs
  • 100g Whole Garlic Cloves
  • 1/2 stalk Green Onion

Seasoning

  • 1.5 Tbsp Soy Sauce
  • 1 Tbsp Sugar
  • 1 Tbsp Mirin (or Cooking Wine)
  • 1.5 Tbsp Corn Syrup (or Oligosaccharide)
  • 1 Tbsp Cheongju (Rice Wine)

Cooking Instructions

If the whole garlic cloves are very large, cut them in half for easier eating and better absorption of the sauce. This step ensures a more pleasant texture and flavor distribution.

Finely chop the green onion into small, bite-sized pieces. This adds a fresh aroma and a hint of pungency to the dish.

Place the walnuts in a sieve to remove any small crumbs. Then, briefly blanch them in boiling water for about 30 seconds to 1 minute. Drain them well in a sieve. This process helps to remove any bitterness or astringency, enhancing the nutty flavor.

Lightly rinse the dried figs under running water. Pour boiling water over them or briefly blanch them in boiling water, then drain well. Be careful not to overcook them, as they can become mushy.

Heat 1-2 tablespoons of olive oil (or cooking oil) in a pan over medium-low heat. Add the prepared garlic cloves and sauté until they turn a light golden brown and become fragrant. Thoroughly sautéing the garlic is crucial to eliminate its raw, pungent flavor and bring out its natural sweetness and delicious aroma. Stir occasionally to prevent burning.

Once the garlic is sufficiently sautéed, add the blanched walnuts and dried figs to the pan. Pour in all the seasoning ingredients: soy sauce, sugar, mirin, and cheongju. Stir quickly over high heat to coat all the ingredients evenly with the sauce. Be mindful not to overcook, as the ingredients can burn.
