Light & Nutty Perilla Seed Stir-Fried Fern Recipe (Side Dish, Steamed Style)
This recipe features a stir-fried fern dish that uses minimal oil, highlighting the subtle flavor of fern and the nutty richness of perilla seeds. Main Ingredients- 220g Prepared Fern (Gosari)
- 1/2 Onion (approx. 60-70g), thinly sliced
- 30g Carrot (approx. 1/4), julienned
- 5 Tbsp Ground Perilla Seeds (Deulkkae Garu)
- 1/2 Cup Water (100ml)
- 1/2 Tbsp Sesame Seeds (for garnish)
Seasoning- 1 Tbsp Minced Garlic
- 1.5 Tbsp Korean Soup Soy Sauce (Guk-ganjang)
- 1 Tbsp Fish Sauce (Anchovy or Sand Lance)
- 1 Tbsp Perilla Oil (Deulgireum)
- 1 Tbsp Minced Garlic

Cooking Instructions
Step 1
First, prepare all the ingredients by measuring them out. Rinse the prepared fern thoroughly under running water and pat dry. If the fern stalks are too long, cut them into bite-sized pieces (about 4-5cm). Thinly slice the onion and julienne the carrot to a similar size as the fern.
Step 2
Place the prepared fern into a mixing bowl. It’s best to remove any tough stem parts and use the more tender fronds for a better texture.
Step 3
Add the thinly sliced onion to the bowl with the fern. The onion will add natural sweetness and depth of flavor to the dish.
Step 4
Add the julienned carrots to the bowl as well. Carrots contribute to the vibrant color of the final dish.
Step 5
Now, add all the prepared seasoning ingredients to the bowl containing the fern, onion, and carrot: 1 Tbsp minced garlic, 1.5 Tbsp Korean soup soy sauce, 1 Tbsp fish sauce, and 1 Tbsp perilla oil.
Step 6
Sprinkle the 5 Tbsp of ground perilla seeds over the ingredients. Gently mix everything together with your hands, ‘jop-jop’ style, to ensure the seasoning and perilla seeds are evenly distributed. Be careful not to mash the ingredients.
Step 7
Transfer the seasoned ingredients to a pot or a deep pan. If the mixture seems dry, add 1/2 cup (100ml) of water around the edges of the pot. This method allows the ingredients to steam and cook in their own moisture.
Step 8
Cover the pot with a lid and cook over medium heat for about 15 minutes, stirring occasionally to prevent sticking. Cook until the fern is tender and the sauce has thickened slightly. This simmering process enhances the flavors.
Step 9
When the ingredients are almost cooked through, sprinkle 1/2 Tbsp of sesame seeds over the top for added nutty flavor and stir gently one more time. This helps to meld the nutty and savory notes of the dish.
Step 10
Serve the finished perilla seed stir-fried fern on a plate. The combination of the carrot’s orange, the fern’s deep green, and the perilla seeds’ white creates a visually appealing dish. Enjoy it as a delicious and healthy side dish with a warm bowl of rice.
