Nuts are a powerhouse of nutrients, essential for growing children and students needing sustained energy. These muffins will be a delightful and nutritious snack for students. While nuts are great on their own, we’ve created a luxurious version to encourage kids to reach for them. Enjoy these delicious and wholesome nutty muffins!
Muffin Batter Ingredients- 600g cake flour (low-gluten flour)
- 60g butter, softened
- 70g grapeseed oil
- 100g granulated sugar
- 100g coconut sugar
- 2 large eggs, room temperature
- 170g mixed nuts (e.g., walnuts, almonds, pecans), chopped
- 300ml orange juice
- 7g baking powder
- 2g salt
- 2g vanilla extract
Cooking Instructions
Step 1
First, prepare all your ingredients by measuring them out. Ensure your butter is softened to room temperature for easy mixing.
Step 2
In a bowl, whisk together the cake flour, baking powder, and salt. Sift this dry mixture at least twice to ensure it’s light and free of lumps. Sifting makes your muffins extra tender.
Step 3
In a separate large bowl, combine the softened butter and grapeseed oil. Gradually add the granulated sugar and coconut sugar, creaming them together with a whisk or electric mixer until the mixture is light and fluffy. (If you’re short on butter or oil, you can mix them. Coconut sugar adds a lovely depth of flavor!) Crack in the room temperature eggs, one at a time, mixing well after each addition.
Step 4
Using a whisk or your mixer, beat the mixture until it turns a pale ivory color and becomes smooth and creamy. Be careful not to overmix at this stage.
Step 5
Pour in the orange juice and stir briefly to combine. Then, add the sifted dry ingredients to the wet mixture. Gently fold them together with a spatula until just combined. It’s crucial to avoid overmixing here; stop as soon as you no longer see streaks of flour. Overmixing can lead to tough muffins.
Step 6
The batter might be a bit on the looser side, so transfer it into a piping bag. This will make it easier to fill your muffin cups evenly. If you don’t have a piping bag, a spoon or ladle will work fine.
Step 7
Roughly chop your assorted nuts. Add a generous amount of the chopped nuts to the batter and gently fold them in. These nuts will add a wonderful crunch and nutty flavor.
Step 8
Using the piping bag, fill your prepared muffin liners about 70-80% full with the batter. This recipe will yield approximately 12 muffins.
Step 9
Preheat your oven to 180°C (350°F). Bake the muffins for 30-35 minutes, or until a skewer inserted into the center comes out clean.
