Easy No-Butter Almond Scone Recipe
Introducing a delightful almond scone recipe that’s simple to make and wonderfully light, as it’s made without butter! Just mix and bake for a perfect treat. If you have an air fryer, you can easily bake these scones without an oven. Enjoy these refreshing, sweet, and nutty no-butter almond scones!
Scone Dough- 85g Cake flour
- 25g Whole wheat flour
- 20g Xylose sugar (or regular sugar)
- 1 tsp Baking powder
- 30g Grapeseed oil (or other vegetable oil)
- 40g Roasted almonds (30g for dough, 10g for topping)
- 25g Orange zest (finely chopped)
- 30g Milk (or as needed)
Lemon Glaze- 24g Powdered sugar
- 1-2 tsp Lemon juice
- 24g Powdered sugar
- 1-2 tsp Lemon juice
Cooking Instructions
Step 1
You can use a food processor or mixer for convenience, but it’s perfectly fine to make these by hand. First, place the cake flour, whole wheat flour, baking powder, and xylose sugar into your chosen mixing bowl or appliance.
Step 2
Briefly pulse or mix the dry ingredients. Then, add the grapeseed oil and process or rub with your fingertips until the mixture resembles coarse crumbs. If mixing by hand, sift the flour and baking powder into a bowl, add the xylose sugar, and whisk lightly. Drizzle in the grapeseed oil and rub the mixture between your palms until it’s crumbly. Tip: You can substitute regular sugar for xylose sugar. Using only whole wheat flour is also an option, but you might need to adjust the milk quantity later.
Step 3
Add the finely chopped orange zest and 30g of the roasted almonds to the mixture. You can chop the almonds coarsely or finely according to your preference. Mix everything lightly, then gradually add the milk while mixing until a cohesive dough forms.
Step 4
If you are using only whole wheat flour, adjust the amount of milk needed so that the dough just comes together into a ball. The amount of milk required can vary depending on the flour’s absorbency.
Step 5
Once the dough is formed into a ball, transfer it to a lightly floured surface and shape it into a rectangle.
Step 6
Fold the rectangle in half, press down gently, and reshape it into a rectangle again. Repeat this folding and reshaping process 3 to 5 times. This step helps to create layers in your scones.
Step 7
Finally, shape the dough into a neat rectangle and cut it into 6 equal portions to form your scones.

Line your air fryer basket with parchment paper and arrange the scone portions, leaving a little space between them.

Preheat your air fryer to 180°C (350°F) for about 5 minutes. Once preheated, carefully place the basket with the scones inside.
Step 10
Bake at 180°C (350°F) for approximately 15 minutes. Then, carefully flip the scones and bake for another 10 minutes, or until golden brown and cooked through. Baking times and temperatures can vary depending on your specific air fryer or oven model, so keep an eye on them.
Step 11
Once baked, remove the scones from the air fryer and let them cool on a wire rack. You can test for doneness by inserting a toothpick into the center – it should come out clean if they are fully cooked.
Step 12
To make them even more delicious, prepare the glaze. In a small bowl, combine the powdered sugar with 1-2 teaspoons of lemon juice and mix until smooth. Drizzle the glaze artistically over the cooled scones using a spoon. Sprinkle the remaining 10g of roughly chopped roasted almonds over the glaze. Let the glaze set in a cool place, and your delightful almond scones are ready to enjoy!
