- 5 Korean green chili peppers (kkwari gochu)
- 5 Tbsp pickled radish (danmuji, approx. 50g, finely chopped)
Batter Ingredients- 100ml pancake mix (approx. 2/3 cup)
- 4 eggs
- 1/2 tsp salt
- 100ml pancake mix (approx. 2/3 cup)
- 4 eggs
- 1/2 tsp salt
Cooking Instructions
Step 1
First, prepare the filling ingredients for the pancake. Get ready 5 Tbsp pickled radish (approx. 50g), 5 Korean green chili peppers, 5 Tbsp ham (approx. 50g), 1/4 bell pepper, and 100g chicken breast. It’s best to chop the ham and pickled radish into small pieces.
Step 2
Finely mince all the prepared chicken breast, ham, bell pepper, Korean green chili peppers, and pickled radish. If you prefer some texture, you can mince them a bit coarser. Ensure all ingredients are evenly mixed.
Step 3
Place the minced ingredients into a large bowl. Add 1/2 tsp of salt and 100ml of pancake mix. The salt will enhance the savory flavor, and the pancake mix will help bind the ingredients together.
Step 4
Gently mix the ingredients with your hands, ensuring the powder coats everything evenly. Mix until the batter isn’t too dry; check the moisture of the ingredients as you mix.
Step 5
Crack in 3 eggs first and mix well. The eggs will help bind everything together and add a rich, savory taste to the pancake.
Step 6
Observe the batter’s consistency and add one more egg, making a total of 4 eggs. Mix again thoroughly. The batter should not be too runny or too thick; it should hold its shape when spooned onto the pan.
Step 7
This is the final consistency of the batter after adding all the eggs and mixing. When scooped with a spoon, the ingredients should not easily fall apart and should maintain their form. If needed, you can adjust the consistency by adding a tiny bit more pancake mix or water.
Step 8
Heat a pan over medium heat and add a generous amount of cooking oil. Spoon portions of the prepared batter onto the hot pan. Making them a similar size, not too large, will ensure they cook evenly.
Step 9
Once one side is golden brown, carefully flip the pancake with a spatula and cook the other side until it’s also golden brown. Cooking each side for about 2-3 minutes will ensure the inside is cooked through.
Step 10
Your ‘Yeongyangmanjeon’ pancake is ready when both sides are a beautiful golden brown! All ingredients are cooked, and the pancake is crispy on the outside and moist on the inside. Enjoy your delicious meal!
