Main Ingredients

  • 4 cups Tteok-guk tteok (rice cake soup rice cakes, about 500g; lightly rinse in water)
  • 5 dumplings (use your preferred type, steam until cooked)
  • 4 cups pre-made beef bone broth or rich beef consommé (about 800ml)
  • 4 cups water (about 800ml, to adjust broth consistency)

Seasonings and Garnish

  • 4 Tbsp Guk-ganjang (Korean soup soy sauce, for savory depth)
  • 2/3 Tbsp Salt (adjust to taste)
  • 1 Tbsp Sesame oil (for nutty aroma!)
  • Pinch of Black pepper (for finishing spice)
  • Shredded dried seaweed (gim, for garnish)
  • 2 stalks Green onion (sliced diagonally)

Cooking Instructions

Step 1

First, prepare the tteok-guk tteok (rice cake soup rice cakes). Lightly rinse them in water to prevent them from sticking together. If you soak them for too long, they might become mushy, so rinsing them just before use will help maintain their chewy texture.

Step 1

Step 2

Steam the dumplings in a steamer until they are fully cooked through. Steamed dumplings will hold their shape better when added to the soup and provide a tender bite.

Step 2

Step 3

In a pot, combine 4 cups of rich beef bone broth with 4 cups of water. Start with a 1:1 ratio and adjust the broth’s consistency as it simmers, according to your preference.

Step 3

Step 4

To add a fresh, aromatic quality to the Tteok-Mandu-Guk, wash and thinly slice 2 stalks of green onion diagonally. These will be added to the broth later.

Step 4

Step 5

Once the broth begins to boil, season it with 4 tablespoons of guk-ganjang (soup soy sauce) and 2/3 tablespoon of salt. After tasting and adjusting the seasoning, add the rinsed tteok-guk tteok and simmer until the rice cakes are tender. The broth will thicken slightly as the rice cakes cook.

Step 5

Step 6

When the rice cakes are tender, carefully add the steamed dumplings to the pot. Gently place them in so they don’t break apart. Simmer briefly just to warm the dumplings through in the soup.

Step 6

Step 7

Finally, drizzle in 1 tablespoon of sesame oil for a rich, nutty flavor, and add a pinch of black pepper to taste. This completes the delicious Tteok-Mandu-Guk.

Step 7

Step 8

When transferring the dumplings to individual bowls using a ladle, be gentle to avoid tearing the dumpling skins. Careful plating ensures both a beautiful presentation and an enjoyable eating experience.

Step 8

Step 9

Garnish the finished Tteok-Mandu-Guk with shredded dried seaweed (gim) and a sprinkle of sesame seeds for a visually appealing and flavorful finish. Enjoy this nutritious and delightful soup while it’s hot!
