  • 1/2 block soft tofu (approx. 150g)
  • A small amount of green onion or scallion (finely chopped)
  • A small amount of bell pepper (or paprika, finely chopped)
  • Cooking oil (or olive oil), as needed

  • 1 Tbsp Mirin (cooking sake)
  • 1 Tbsp Tuna extract (or salted shrimp, fish sauce)

Cooking Instructions

In a bowl, crack 3 fresh eggs. Add 1 tablespoon of mirin and 1 tablespoon of tuna extract (or salted shrimp, fish sauce). Whisk gently with chopsticks or a whisk until the egg whites and yolks are well combined. Avoid over-whisking to prevent too much foam.

Mash the 1/2 block of tofu with a fork or finely chop it with a knife. If the tofu pieces are too large, they might separate in the omelet, so it’s best to dice it smaller than bite-sized or mash it well.

Wash and pat dry the bell pepper (or paprika) and green onion. Finely mince them so they can be evenly mixed into the omelet batter. These vegetables add color and aroma, so feel free to adjust the quantity to your preference.

Gently press the prepared tofu with a paper towel to remove excess moisture. Excess water can make the omelet texture mushy. If you’ve mashed the tofu with your hands, you might be able to skip this step.
