Main Ingredients

  • 500g fresh spinach (trim the roots neatly)
  • 1 block (approx. 300-350g) soft tofu
  • 1/2 stalk green onion (focus on the white part)
  • 1 red chili pepper (for color)
  • 1 soup stock pack (or anchovy stock pack)

Seasoning

  • 3 Tbsp savory miso paste (use a tablespoon measure; adjust according to the saltiness of your miso)

Cooking Instructions

Step 1

Pour 1.5 liters (about 6 cups) of water into a deep pot and add the stock pack. Bring to a boil over high heat.

While the water boils, prepare the ingredients. Slice the green onion diagonally about 0.5cm thick. Remove the seeds from the red chili pepper and slice it thinly on an angle for a nice presentation. Cut the tofu into bite-sized cubes, about 1.5cm.

Once the water is boiling, remove the stock pack. Dissolve the 3 tablespoons of miso paste into the water, stirring with a spoon to ensure there are no lumps.

When the miso-dissolved broth returns to a boil, add all the prepared spinach. Keep the lid open and cook over high heat for 1-2 minutes, just until the spinach wilts and its vibrant green color appears. (Boiling for too long can make the spinach mushy!)

As the spinach turns a bright green and the soup comes to a boil again, gently add the cubed tofu. Reduce the heat to medium and simmer for another 2-3 minutes, allowing the tofu to heat through.

Finally, add the sliced red chili pepper and green onion, and simmer for just a moment longer (about 30 seconds to 1 minute). Taste and adjust the seasoning with salt if needed, according to your preference. (Remember that miso paste is already salty, so taste before adding more salt.)
