Key Ingredients
- 1 can canned corn, drained well
- 2 large eggs
- 2 imitation crab sticks (surimi) or crab meat
- 1/3 Korean green chili pepper, finely chopped (optional, for a hint of spice)
- 1 pinch of salt (to taste)
- 2 Tbsp olive oil or vegetable oil (for frying)

Step 1
First, drain the canned corn thoroughly using a sieve. Ensuring the corn is well-drained is crucial to prevent the fritters from becoming soggy, so don’t skip this step!

Next, finely chop the drained corn. Using a food processor or immersion blender makes this process quick and easy. If you don’t have these appliances, you can finely chop the corn kernels with a knife. Aim for a texture that still has some bite, rather than a complete mash.

Transfer the chopped corn to a mixing bowl. Crack in the 2 large eggs and mix everything together to form a batter. Stir well until the corn and eggs are evenly combined. You can adjust the amount of egg slightly depending on your desired batter consistency.

For an extra kick of flavor, finely chop the Korean green chili pepper and add it to the batter. You can substitute with other chili peppers like red or green bell peppers if preferred. If making these for children or those who prefer milder flavors, you can omit the chili or use a less spicy variety.
