Experience the delightful combination of soft, cloud-like silken tofu and chives, a vegetable known for its liver-benefiting properties. In these challenging times, boost your energy with this healthy and wholesome bibimbap!
Main Ingredients- 3 cups Chamdream Gyeonggi rice (approx. 450g)
- 1 handful nutritious chives (approx. 50g)
- 4-5 fresh lettuce leaves
- 150g silken tofu
- 5cm white part of green onion
- 1/3 zucchini (approx. 50g)
- 1/2 packet enoki mushrooms (approx. 50g)
- 2 cheongyang peppers (adjust spiciness)
- 2 fresh eggs
- 1/2 Tbsp sesame oil
- A pinch of sesame seeds
Ssamjang Sauce- 2 Tbsp doenjang (soybean paste)
- 1/2 Tbsp gochujang (red chili paste)
- 0.5 Tbsp minced garlic (approx. 1/2 tsp)
- 1 Tbsp sugar
- 1 paper cup water (approx. 200ml)
- 2 Tbsp doenjang (soybean paste)
- 1/2 Tbsp gochujang (red chili paste)
- 0.5 Tbsp minced garlic (approx. 1/2 tsp)
- 1 Tbsp sugar
- 1 paper cup water (approx. 200ml)
Cooking Instructions
Step 1
First, prepare all the fresh, healthy, and wholesome ingredients for your bibimbap. Cook the rice and wash all the vegetables thoroughly.
Step 2
Wash the nutritious chives and cut them into bite-sized pieces, about 3-4cm long. Similarly, chop the lettuce leaves into manageable sizes.
Step 3
Trim the base of the enoki mushrooms and separate them into strands. Thinly slice the zucchini after removing the seeds. Finely mince the white part of the green onion. Finely mince the cheongyang peppers, removing the seeds first. (If you prefer less spice, use regular chili peppers or omit them).
Step 4
In a small pot, combine all the ssamjang sauce ingredients: 2 Tbsp doenjang, 1/2 Tbsp gochujang, 0.5 Tbsp minced garlic, and 1 Tbsp sugar.
Step 5
Pour in 1 paper cup (approx. 200ml) of water. Use a spatula to gently stir and mix the ingredients until well combined and there are no lumps.
Step 6
Once the sauce is smooth, add the prepared zucchini slices, enoki mushrooms, and minced cheongyang peppers to the pot. Bring to a simmer over medium heat and cook until the vegetables are tender.
Step 7
When the ssamjang sauce begins to bubble, carefully add the silken tofu in large chunks. Avoid stirring too vigorously to prevent the tofu from breaking apart.
Step 8
Continue to simmer the sauce with the tofu for a short while until it thickens slightly. About one minute before turning off the heat, add the minced green onion. Finish by drizzling 1/2 Tbsp of sesame oil and sprinkling sesame seeds over the top. Your delicious silken tofu ssamjang is now complete!
Step 9
Prepare a fried egg to go on top of your bibimbap. Cook it to your preference, either sunny-side up or fully cooked.
Step 10
Fill a bowl generously with the freshly cooked warm rice. Arrange the prepared chives and lettuce attractively on top. Place the fried egg in the center, and generously spoon the silken tofu ssamjang over everything. Mix it all together with your chopsticks or spoon and take a large, satisfying bite!
