  • 2 dumplings (frozen)
  • 1 piece chicken breast (approx. 100-150g)

Broth Ingredients and Seasoning

  • 500ml store-bought detox broth or chicken broth
  • 5 dried shiitake mushrooms
  • 5 pieces dried kelp (approx. 5cm x 5cm each)
  • 1 Tbsp soup soy sauce
  • 1 Tbsp fish sauce
  • 1 Tbsp plum extract
  • Pinch of salt (to taste)
  • 1/2 tsp black pepper
  • 1 tsp honey
  • 1 Tbsp sesame oil
  • 1 Tbsp toasted sesame seeds
  • 1 bay leaf

Cooking Instructions

Step 1

First, rinse the 150g of Tteokguk rice cakes under running water until clean. After rinsing to prevent them from sticking together, soak them in cold water for 30 minutes. This soaking process will make the rice cakes softer, resulting in a wonderfully chewy texture when cooked.

In a pot, add enough water to cover the 1 chicken breast. Add 1 tablespoon of salt and 1 bay leaf to the water. Once the water boils, add the chicken breast and simmer for about 15-20 minutes until fully cooked. This method helps remove any gaminess from the chicken and keeps the meat tender, making it a perfect topping for your Tteokguk.

To prepare the broth, pour 500ml of store-bought detox broth or chicken broth into a pot. Add the 5 dried shiitake mushrooms and 5 pieces of dried kelp that you’ve prepared earlier. These ingredients will create a rich and flavorful broth base.

Once the broth begins to boil, drain the soaked Tteokguk rice cakes and add them to the pot. Stir occasionally to prevent the rice cakes from sticking to the bottom of the pot.

Now it’s time to add the seasonings that will enhance the umami of your Tteokguk. Add 1 tablespoon of soup soy sauce, 1 tablespoon of fish sauce, and 1 tablespoon of plum extract. The combination of these three seasonings is key to bringing out the deep flavor of the soup.

When the rice cakes are somewhat cooked, add the 2 frozen dumplings to the pot and let them cook together. Make sure to cook them over medium heat to prevent the dumplings from bursting.

Let the boiled chicken breast cool slightly, then shred it into bite-sized pieces using your hands. Season the shredded chicken with 1/2 tablespoon of salt, a pinch of black pepper, and 1 teaspoon of honey. Gently mix everything together. Adding honey will make the chicken breast even more tender and add a subtle sweetness.

Remove the 2 pieces of kelp used for the broth, rinse them thoroughly, and then julienne them into thin strips. These kelp strips will be used as a garnish on top of the Tteokguk, adding a pleasant chewy texture and extra flavor.

Once the Tteokguk is fully cooked and the soup is boiling, taste and adjust the seasoning. If it’s not salty enough, add about 1/2 tablespoon of salt to reach your desired flavor. (The original recipe’s 1 tablespoon of salt has been adjusted to 1/2 tablespoon for saltiness control.)

Now it’s time to plate your delicious Shiitake Mushroom & Chicken Tteokguk. Ladle the hot Tteokguk into bowls. Arrange the seasoned shredded chicken and julienned kelp attractively on top. Finally, drizzle with 1 tablespoon of toasted sesame seeds and 1 tablespoon of sesame oil for a beautiful presentation and wonderful aroma. Your Shiitake Mushroom & Chicken Tteokguk is now complete!
