Introducing ‘Seaweed and Shrimp Rice,’ a simple and delicious dish often made by my mother. It’s perfect for when your pantry is bare of side dishes, allowing you to whip up a wonderful meal in no time. This is highly recommended for busy homemakers and anyone looking for a tasty and healthy home-cooked meal!
Rice Cooking Ingredients- Soaked rice for 2 servings
- Soaked seaweed (soaked for about 5 minutes) – 1 handful
- Dried small shrimp – 1/2 cup
- Sesame oil – a little

Step 1
First, let’s prepare the ingredients for this delicious seaweed and shrimp rice.
Step 2
For the rice, soak it in water for at least 1 hour beforehand, then drain it in a sieve. Using soaked rice makes the cooked rice much softer and tastier.

Briefly soak the dried seaweed in cold water for about 5 minutes. Seaweed is a low-calorie, low-fat food, excellent for dieting. Its abundant dietary fiber provides a feeling of fullness and aids bowel movements, helping to prevent constipation. It’s also rich in calcium, which strengthens bones.
Step 4
Prepare the small, cute dried shrimp. If your dried shrimp are large, you can cut them into bite-sized pieces. Dried shrimp are excellent for preventing osteoporosis, improving anemia, and boosting immunity.

Now, prepare the pot for cooking the rice. Any pot will do, whether it’s a special one or a regular pot or donabe. Lightly coat the bottom of the pot with fragrant sesame oil.

Add the drained soaked rice to the pot. Sauté it very briefly, just enough to coat the grains with sesame oil. This step helps the rice grains become fluffy and distinct.

After sautéing the rice, add the prepared soaked seaweed to the pot.

Sauté again briefly after adding the seaweed. The aim is to lightly coat all the ingredients with oil.

Next, add the dried shrimp and sauté everything together briefly once more. This step helps the ingredients develop a savory aroma.

It’s time to add the cooking water. I’m using water infused with kelp for extra umami and nutrients, but plain water is perfectly fine too. Use the same amount of water as you normally would for cooking rice.

Now, cover the pot with a lid and cook the rice over medium-low heat for about 20 minutes. The cooking time may vary slightly depending on the heat of your induction cooktop or stove, so check and adjust as needed.

After 20 minutes, open the lid to reveal perfectly cooked rice! Doesn’t the steam rising from it look appetizing? Turn off the heat and let the rice steam for about 5 more minutes with the lid on. This step makes the rice grains even more moist and tender.

The rice has turned out beautifully! To make this seaweed and shrimp rice even more delicious, a seasoned soy sauce dip is a must. Finely chop fresh ingredients like Korean wild chives (dallae), chives, Korean green chili peppers, and scallions to make a sauce according to your preference. I usually make a simple sauce with soy sauce, a little chopped green chili pepper, sesame oil, toasted sesame seeds, and chopped scallions. This freshly cooked rice is delicious on its own, but adding nutrients makes it a truly wonderful meal. It’s great served with just kimchi or seaweed, or for a more satisfying meal, enjoy it with a warm stew!
