Ingredients- Dried seaweed (cut) 1 handful (approx. 10-15g)
- Salt 1 tsp
- Soy sauce for soup 1 Tbsp
- Rice water 800ml (or anchovy-kelp broth)

We’re going to make a hearty seaweed soup using rice water as the base, which adds a wonderful savory depth.

If you don’t have rice water readily available, you can make it by washing your rice twice and discarding the water, then collecting about 800ml of water from the third or fourth rinse. For a clearer broth, rinse the rice more thoroughly.

Add 1 tsp of salt and 1 Tbsp of soy sauce for soup to the rice water to season it. Taste and adjust the seasoning by adding more salt if needed. For an extra umami kick, you can substitute the salt with fish sauce.
