First, rinse 3 cups of rice thoroughly. For the cooking water, use about 0.5 cm less than you normally would. After rinsing the rice, spread the 300g of washed bean sprouts generously on top. Now, simply place it in the rice cooker and press the ‘Cook’ button. Your delicious bean sprout rice will be ready! It’s important to adjust the water amount; too much water can make the bean sprouts mushy.

While the bean sprout rice is cooking, let’s prepare the flavorful soy sauce dressing. In a bowl, combine 1/2 cup of water and 1/2 cup of soy sauce. Add 1 Tbsp of gochugaru, 2 tsp of sugar, the chopped Korean wild chives (or green onions), and a pinch of toasted sesame seeds. For extra aroma, add 1 Tbsp of sesame oil. If you like a bit of heat, finely chop half a Cheongyang pepper and add it in. Stir everything well until combined. Your delicious dressing is now ready!
