Red bean glutinous rice is a special dish often eaten on birthdays, also known as ‘birthday rice.’ This nutritious and chewy rice is made by cooking red beans with soaked glutinous rice. Even when made conveniently in a rice cooker, it’s incredibly delicious. Legend has it that eating red bean rice with seaweed soup on your birthday brings good fortune, so be sure to make and enjoy it on your special day!
Ingredients- 1 cup red beans
- 2 cups glutinous rice
- 1 cup regular white rice
- 1 Tbsp salt
- 3 cups water
Cooking Instructions
Step 1
First, prepare the glutinous rice and regular white rice. Place both types of rice in a bowl and rinse them gently 3-4 times under running water until the water runs clear. After rinsing, soak the rice in cold water for at least 1 hour. Soaking the rice will make the cooked rice softer and more moist.
Step 2
Drain the soaked rice using a sieve. It’s important to drain off all excess water to ensure the rice is cooked fluffy and not mushy.
Step 3
Now, it’s time to cook the red beans. Rinse the red beans lightly under running water. Place the rinsed red beans in a pot and add enough water to cover them. Bring to a boil and cook for about 3 minutes. Discard the cooking water. This step helps to reduce any bitterness from the red beans.
Step 4
After the first boil, drain the red beans and rinse them with cold water. Return the red beans to the pot, add enough fresh cold water to cover them, and stir in 1/2 Tbsp of salt. Cook for 30 to 40 minutes until the red beans are tender. You can check for doneness by piercing a bean with a fork; it should mash easily.
Step 5
Once the red beans are cooked, remove them from the pot, and reserve the cooking liquid separately. The cooked red beans will be added to the rice, and the cooking liquid can be used as part of the cooking water for the rice, enhancing its flavor.
Step 6
Now, prepare to cook the rice. Add the drained glutinous rice to the inner pot of your rice cooker. The glutinous rice will provide the chewy texture.
Step 7
Spread the cooked red beans evenly over the glutinous rice in the pot. The colorful red beans will create a beautiful appearance in the finished rice.
Step 8
Add the remaining 1/2 Tbsp of salt evenly over the red beans. The salt will help to bring out the overall flavor of the rice.
Step 9
Pour in the cooking water. Add 3 cups of water. If you are using the reserved red bean cooking liquid, you can adjust the ratio by using half red bean water and half regular water to add more depth of flavor to your red bean rice.
Step 10
Close the lid and select the ‘Mixed Grain’ or ‘Glutinous Rice’ setting on your rice cooker to begin cooking. When the rice is done and the pressure has released, gently mix the rice from the bottom up with a rice paddle. Stir until the red beans and rice are well combined. Enjoy your delicious red bean glutinous rice while it’s warm!
