  • 1.5 cups glutinous rice
  • 0.5 cup regular rice
  • 0.5 cup adzuki beans (soaked)
  • 0.5 cup chickpeas (soaked)
  • 2 Tbsp barley
  • 15 chestnuts (prepared)
  • 1 tsp salt (for cooking rice)
  • 3 mini pumpkins

First, wash the glutinous rice, regular rice, and barley thoroughly and let them drain in a sieve. It’s best to use them slightly soaked to prevent the rice grains from absorbing excess moisture.

In an electric pressure cooker, combine the washed glutinous rice, regular rice, and barley. Add the soaked adzuki beans. Use slightly less water than you normally would for cooking rice. Add 1 teaspoon of salt and cook on the high-pressure white rice setting. This forms the base for your delicious and nutritious rice.

While the rice is cooking, prepare the pumpkin. Since we’re using the skin, scrub the pumpkin thoroughly using coarse salt or baking soda to ensure it’s clean. Then, soak it in water with a little vinegar for about 5 minutes for added peace of mind.

Place the cleaned pumpkin with the stem facing down and microwave for 4 minutes. This will slightly soften the pumpkin, making it easier to scoop out the insides. After microwaving, carefully cut off the top part of the pumpkin like a lid, and then use a spoon to scoop out the seeds and stringy bits from the inside.

Check the rice that has been cooked in the rice cooker. The perfectly cooked, fluffy rice is now ready to be stuffed into the pumpkin.
