Recently, my in-laws gave me some pine nut porridge, and since I had plenty of pine nuts, I decided to make some myself! It’s rich in protein and perfect for winter. It also makes an excellent meal for those who are recovering or need easily digestible food. It’s truly wonderful!

Ingredients

  • 1 cup soaked rice (approx. 200g)
  • 1 cup pine nuts (approx. 100g)
  • 5 cups water (approx. 1000ml)

Cooking Instructions

Step 1

First, wash the rice thoroughly and let it soak for at least 30 minutes. Soaking the rice well ensures a smoother, more digestible porridge.

Add 1 cup of water to the soaked rice and blend it until very smooth in a blender. If you are preparing this for someone who is ill or for a baby, blending it extra smooth is recommended.

Pour 3 cups of water into a pot and bring it to a rolling boil over high heat.

Once the water is boiling, add all the blended rice to the pot and stir continuously as it cooks. It’s crucial to stir frequently to prevent the rice from sticking to the bottom and clumping. Cook for about 10 minutes, stirring constantly, until the rice is fully cooked and has a smooth consistency. After adding the rice and it starts to boil, reduce the heat to low and continue to cook.

Next, prepare the pine nuts by removing their pointed tips. You can blend the pine nuts very finely for a silky texture, or leave them slightly coarser if you prefer a bit of chewiness.

Add the remaining 1 cup of water to the pine nuts and blend them until smooth. Pour the blended pine nuts into the pot with the rice porridge. Continue to stir constantly over low heat to prevent sticking, similar to the rice porridge. Pine nut porridge can stick to the bottom more easily, so be attentive.

As the pine nuts cook, the porridge will start to bubble and rise. Check the consistency of the porridge. Once it has thickened and the rich, nutty flavor has developed, turn off the heat and it’s ready. You can season with a pinch of salt or a touch of sugar to your taste.
