Nutritious & Hearty Tofu and Egg Braise
Easy and Delicious Tofu and Egg Braise
Here’s a recipe for a satisfying side dish made with the dynamic duo of tofu and eggs from your refrigerator. You can quickly whip up a delicious and nutritious meal, even on busy mornings.
Main Ingredients- 300g Tofu (approx. 1 block)
- 2 Eggs
- 1 stalk Green Onion
- 1/2 Red Chili Pepper
- 1/2 Green Chili Pepper
- 1/7 Onion (small size)
Braising Sauce Ingredients- 1 tsp Minced Garlic
- 1/2 Tbsp Cooking Wine (Mirin, etc.)
- 1 Tbsp Plum Extract
- 1 Tbsp Soy Sauce
- 1 tsp Tuna Extract (can substitute with soup soy sauce or fish sauce if unavailable)
- 1.5 Tbsp Gochugaru (Korean Chili Flakes)
- 1 Tbsp Perilla Oil
- 1/2 Tbsp Cooking Oil
- Pinch of Black Pepper
- 1 tsp Chicken Stock (or 1 cup water)
- 1 tsp Minced Garlic
- 1/2 Tbsp Cooking Wine (Mirin, etc.)
- 1 Tbsp Plum Extract
- 1 Tbsp Soy Sauce
- 1 tsp Tuna Extract (can substitute with soup soy sauce or fish sauce if unavailable)
- 1.5 Tbsp Gochugaru (Korean Chili Flakes)
- 1 Tbsp Perilla Oil
- 1/2 Tbsp Cooking Oil
- Pinch of Black Pepper
- 1 tsp Chicken Stock (or 1 cup water)
Cooking Instructions
Step 1
Prepare 300g of tofu and cut it into bite-sized cubes, about 2cm thick. Lightly patting the tofu dry can help prevent it from breaking apart during cooking.
Step 2
Slice the white part of the green onion diagonally. Remove the seeds from the red and green chili peppers and finely chop them. Thinly slice the onion. (You can set aside the green leafy parts of the green onion to use for broth or garnish later.)
Step 3
In a large bowl, combine 1 tsp minced garlic, 1/2 Tbsp cooking wine, 1 Tbsp plum extract, 1 Tbsp soy sauce, 1 tsp tuna extract, 1.5 Tbsp gochugaru, a pinch of black pepper, and 1 Tbsp perilla oil. Mix well to create a delicious braising sauce.
Step 4
Heat 1/2 Tbsp cooking oil in a pot. Add the sliced green leafy parts of the green onion and sauté briefly until fragrant. Arrange the cubed tofu attractively over the green onions. Pour the prepared braising sauce evenly over the tofu. Add 1 cup of water and 1 tsp of chicken stock (or just 1 cup of water) and bring to a boil over medium heat.
Step 5
Once the tofu braise is simmering, prepare 2 eggs by whisking them thoroughly until smooth.
Step 6
Slowly pour the whisked egg mixture over the simmering tofu and ingredients. Cover the pot and continue to cook on low heat for about 5-7 minutes, or until the eggs are cooked through. This will result in a delicious tofu and egg braise. You can sprinkle sesame seeds on top for an extra touch of flavor.
