Ingredients

  • 5 cups roasted nuts (walnuts, almonds, pumpkin seeds, dried cranberries, cacao nibs, peanuts)
  • 2 cups grains (roasted lentils, roasted oats, roasted brown rice)
  • 2 cups oligosaccharide syrup
  • 2 Tbsp sugar

Cooking Instructions

1. In a large bowl, combine the prepared roasted nuts (walnuts, almonds, pumpkin seeds, dried cranberries, cacao nibs, peanuts) with the roasted lentils and roasted oats. Mix everything thoroughly. This ensures a delightful blend of textures and flavors in every bite.

2. In a medium saucepan, pour in the oligosaccharide syrup and bring it to a simmer over medium heat. Once it starts bubbling, add the 2 tablespoons of sugar and stir until the sugar is completely dissolved. Continue to simmer gently until the syrup thickens slightly. Immediately remove from heat to prevent burning.

3. Quickly pour the nut and grain mixture into the warm syrup. Using a spatula or silicone scraper, stir rapidly to ensure the syrup evenly coats all the ingredients. Working swiftly is crucial to prevent the mixture from clumping.

4. Prepare an approximately 8×8 inch square pan by lining it with parchment paper or lightly greasing it. Transfer the nut and grain mixture into the prepared pan. Using the back of a spoon or your hands (lightly wetting your hands can prevent sticking), press the mixture down firmly and evenly to create a compact, flat layer. Pressing down well is key to making clean cuts later.
