This magical one-pan toast recipe is a fantastic way to use up leftover vegetables and create a nutritious meal in no time. Simply whisk eggs, mix in your fridge’s remaining veggies, and pan-fry for a satisfying breakfast or snack. It’s incredibly easy, requiring only one pan, making it perfect for busy mornings.
Main Ingredients- 2 slices of bread
- 4 eggs
- 1/4 bell pepper (use various colors for visual appeal)
- 1/4 onion (or a small amount)
- 1 tomato
- 1 Tbsp minced green onion (white parts of scallions are recommended)
- 70g mozzarella cheese (adjust to your preference)
Toast Sauce- Pinch of salt
- 1 Tbsp mustard sauce (whole grain mustard is also a great option)

Cooking Instructions
Step 1
First, let’s prepare the vegetables. Finely mince the onion and dice the bell pepper into similar-sized pieces. Thinly slice the tomato. Feel free to add other leftover vegetables from your fridge, such as zucchini or mushrooms.

Cut the bread slices in half for easier handling. You can cut them into quarters or use them whole if preferred.

In a wide bowl, crack the 4 eggs and whisk them well. Add the minced vegetables (onion, bell pepper), minced green onion, and a pinch of salt. Stir everything together until evenly combined. It’s important to season it so it’s not too salty.

Heat 2 tablespoons of olive oil in a frying pan over medium heat. Pour half of the prepared egg mixture (enough for 2 eggs) to thinly coat the bottom of the pan. Once the egg mixture starts to set slightly, place the two bread slices side by side on top of the egg. Ensure the bread is partially submerged in the egg mixture.

When the edges of the bread start to cook, gently loosen it with a spatula and cook for about 1 minute. Then, carefully flip it over. Cook the top side of the bread until it’s lightly golden brown.
