Try making this highly nutritious Siraegi Gimbap using seasonal dried radish greens! It’s a perfect, healthy snack for children or a satisfying meal for yourself. The unique savory flavor of the radish greens, combined with various fillings, creates a rich and delightful taste experience.
Gimbap Ingredients- 1 and 1/2 bowls cooked rice, warm
- 100g boiled dried radish greens
- 1/2 carrot (approx. 100g)
- 2 eggs
- 1 sheet pickled radish for gimbap
- 1 strip seasoned burdock root for gimbap
- 3 sheets dried seaweed (gim) for gimbap
Dried Radish Greens Seasoning & Sautéing- 1 Tbsp soy sauce
- 1 Tbsp perilla oil
- A pinch of toasted sesame seeds
- 1 Tbsp soy sauce

Cooking Instructions
Step 1
First, thoroughly squeeze out the water from the boiled dried radish greens. Then, gently mix them with 1 Tbsp soy sauce, 1 Tbsp perilla oil, and a pinch of toasted sesame seeds. Lightly sautéing the seasoned radish greens over low heat will enhance their deep flavor.
Step 2
Finely julienne the carrot. Lightly oil a pan, add the julienned carrots and a pinch of salt, and stir-fry until they become vibrant in color and slightly crisp. Be careful not to overcook, as they can become mushy.
Step 3
Whisk the eggs and cook them into thin omelets, then slice them into bite-sized pieces. Prepare the pickled radish and seasoned burdock root by cutting them into suitable lengths for the gimbap. With all the filling ingredients ready, you are set to make your delicious Siraegi Gimbap.
Step 4
Season the warm rice with a little perilla oil and salt, mixing gently to avoid mashing the rice grains. Lay a sheet of dried seaweed (gim) on a bamboo rolling mat, spread the seasoned rice thinly, and then arrange the prepared dried radish greens, carrots, pickled radish, burdock root, and egg omelet neatly on top. (Tip: For a neater and more visually appealing gimbap, you can first wrap the carrots and radish greens with a small piece of seaweed before placing them on the rice and rolling. This helps prevent the fillings from shifting and keeps the shape intact.)
Step 5
Once the gimbap is rolled, lightly brush the surface with perilla oil for a glossy finish. Now, slice the gimbap into your desired thickness and enjoy! It tastes best when served warm.
