Ingredients- Oatmeal: 100g (quick-cooking or rolled oats)
- Soy Milk: 60ml (unsweetened recommended)
- Maple Syrup: 30ml (or agave nectar)
- Raisins: 40g (can substitute with dried cranberries or other dried fruits)
- Dried Orange Slices: 10g (or finely chopped zest of organic oranges)
- Sliced Almonds: 40g (nuts can be omitted or substituted)
- Salt: 1g (a pinch)
Cooking Instructions
Step 1
Prepare the Wet Ingredients: In a bowl, combine soy milk (60ml), maple syrup (30ml), and salt (1g). You can optionally add 20ml of cooking oil for extra crispiness. Gently warm this mixture by placing the bowl over a double boiler (bain-marie) or by microwaving it for about 1 minute until it’s warm to the touch. This step helps the oats absorb moisture better.
Step 2
Prepare the Add-ins: If using dried orange slices, have them ready. If using fresh orange zest, wash an organic orange thoroughly, zest it, and finely chop the zest. Measure out the sliced almonds.
Step 3
Combine Dry Ingredients: In a larger bowl, combine the oatmeal (100g), raisins (40g), dried orange slices or zest (10g), and sliced almonds (40g).
Step 4
Mix Wet and Dry: Pour the warmed wet ingredients from step 1 into the bowl containing the dry ingredients.
Step 5
Let the Mixture Rest: Stir everything together with a spatula or spoon until well combined. Cover the bowl with plastic wrap or a lid and let it sit at room temperature for 20-30 minutes. This allows the oatmeal to soften and absorb the liquid, creating a cohesive dough.
Step 6
Shape the Cookies: Take about 30g portions of the rested mixture and gently roll them into balls, then flatten them slightly with your hands. You can adjust the size of the cookies to your preference.
Step 7
Form the Cookies: Place the shaped dough onto a baking sheet lined with parchment paper. You can use cookie cutters or simply press down with the back of a spoon or your fingers to create a cookie shape. If you don’t have cookie cutters, a rustic, free-form shape is perfectly fine!
Step 8
Bake the Cookies: Bake in a preheated oven. For a crispier texture, bake at 140°C (285°F) for 15 minutes. For a chewier texture, bake at 130°C (265°F) for 17 minutes. Oven temperatures can vary, so keep an eye on the cookies towards the end of baking.
Step 9
Cool Down: Once baked, let the cookies cool on the baking sheet for a few minutes before attempting to move them, as they can be fragile when hot. Then, transfer them to a wire rack to cool completely. This ensures they achieve their final crisp or chewy texture.
