Must-Have Beef Seaweed Soup for Your Birthday Celebration
Whip up a comforting and delicious beef seaweed soup with a rich, profound flavor. It’s an essential dish for any birthday meal!
Main Ingredients- Dried seaweed (miyeok) 10g
- Beef (for soup) 300g
- Dashi broth 1L (1L water steeped with a 10x10cm piece of kombu for 15 minutes)
Seasoning & Others- Soup soy sauce (gukganjang) 1/2 ladle (approx. 50ml)
- Fish sauce (kkanaeri aekjeot) 1 Tbsp (15ml)
- Minced garlic 1 Tbsp (15g)
- Perilla oil (for stir-frying beef) a little

Cooking Instructions
Step 1
First, soak the dried seaweed in clean water for about 20 minutes until fully rehydrated. If you’re short on time, using warm water will speed up the soaking process.
Step 2
For the beef that was in the freezer, soak it in cold water for about 15-20 minutes to remove any blood. Removing the blood will result in a clearer soup and prevent any gamey odors.
Step 3
Once the seaweed is well-soaked, gently knead it with your hands and rinse thoroughly. Rinse it several times to remove any debris, then cut it into bite-sized pieces with scissors. Cutting it into manageable pieces is recommended, especially for children or the elderly.
Step 4
Pat the blood-removed beef dry with paper towels. Heat a pot over medium heat, add a little perilla oil, and stir-fry the beef. Cook until the surface turns opaque.
Step 5
Avoid overcooking the beef at this stage. Cook it just until the color changes and the pinkness disappears from the surface. This ensures the beef remains tender in the soup later.
Step 6
Once the beef is partially cooked, add the prepared seaweed to the pot and stir-fry them together. Continue to stir-fry for about 2-3 minutes, allowing the seaweed to absorb the flavors of the oil and beef drippings. This step helps to bring out the umami of the seaweed.
Step 7
Add 1/2 ladle of soup soy sauce for initial seasoning and continue to stir-fry briefly. Then, pour in 1L of dashi broth and bring it to a boil over high heat. You can also use anchovy broth or rice water.
Step 8
Once the soup comes to a rolling boil, reduce the heat to medium-low. Cover the pot or leave it partially uncovered and simmer for another 10-15 minutes. This allows the flavors of the seaweed and beef to meld beautifully into the broth, creating a deep and rich taste. Seaweed soup gets better with longer simmering!
Step 9
Finally, add 1 Tbsp of minced garlic and simmer for another short while. Taste the soup and adjust the seasoning with 1 Tbsp of fish sauce if needed. Fish sauce adds an extra layer of umami and depth. Your delicious beef seaweed soup is now ready!
