A Simple Yet Hearty Breakfast: Nutritious Egg Vegetable Toast
Introducing the Egg Vegetable Toast, lovingly made as a hearty breakfast option for my husband. It features a delightful combination of crisp vegetables and fluffy eggs, perfect for a quick and easy meal on busy mornings for the whole family.
Toast Ingredients- A little butter
- 4 eggs
- 1/3 small carrot
- 1 stalk scallion
- A pinch of salt
- 6 slices of bread
- 3 slices of cheese
- 1/2 apple
- 4 leaves of lettuce
- A little ketchup
Cooking Instructions
Step 1
First, crack 4 eggs into a reasonably sized rice bowl or mixing bowl. Using fresh eggs is key, just like when making fried or scrambled eggs.
Step 2
Whisk the eggs thoroughly with a whisk or fork until the whites and yolks are completely combined. It’s important to mix well for a smooth and even texture.
Step 3
Once all 4 eggs are cracked into the bowl, gently whisk them with a fork until the yolks and whites are well blended. The goal is to create a smooth, lump-free egg mixture.
Step 4
To the well-whisked egg mixture, add 1 finely chopped scallion. The subtle aroma and crisp texture of the scallions will complement the eggs beautifully.
Step 5
Peel and finely mince 1/3 of a small carrot, then add it to the egg mixture. The carrot’s sweetness and color will add richness to the toast. Using a mandoline slicer can help you mince it finely.
Step 6
After mixing the finely chopped scallions and minced carrot into the egg mixture, add a pinch of salt to season according to your preference. Be careful not to add too much; taste and adjust as needed.
Step 7
Gently mix everything together again to ensure all ingredients are well combined. Your delicious egg and vegetable mixture is now ready.
Step 8
Heat a non-stick frying pan over medium-low heat, then add a generous amount of butter. You’ll know it’s ready for toasting when the butter melts and releases a lovely aroma.
Step 9
Carefully place the bread slices onto the buttered pan. It’s important to manage the heat to prevent the bread from burning.
Step 10
Toast all 6 slices of bread until golden brown on both sides. This creates the perfect base for your toast – crispy on the outside, soft on the inside. If your pan is small, toast them in batches.
Step 11
Clean the frying pan or use another one, heat it over medium-low heat, and add a little cooking oil. Swirl the oil to coat the pan evenly.
Step 12
Pour the prepared egg and vegetable mixture into the heated pan, about one ladleful at a time. Avoid spreading the mixture too thinly; a slightly thicker omelet will yield a richer egg flavor.
Step 13
I cooked mine into large, round patties. You can also make smaller, pancake-like portions or any shape you prefer. Use a spatula to gently flip and cook both sides until done.
Step 14
Place one slice of the beautifully butter-toasted bread onto your plate. You’re now ready to assemble your delicious toast.
Step 15
Carefully lay one slice of cheese on top of the bread. The melting cheese will bind the other ingredients together, adding a wonderful richness.
Step 16
Thinly slice 1/2 of a washed apple and arrange the slices attractively over the cheese. The apple’s freshness will cut through any richness and add a refreshing note.
Step 17
Wash and tear 4 lettuce leaves into bite-sized pieces. The crisp lettuce will add another delightful texture to your toast.
Step 18
Gently lift the large, round egg and vegetable patty and place it on top of the assembled toast. This hearty egg layer is the star of the show.
Step 19
The final touch! Drizzle some ketchup over the egg layer. The sweet and tangy ketchup will balance the overall flavors perfectly.
Step 20
Finally, top it off with the other slice of butter-toasted bread. A gentle press will help it hold its shape. Your delicious Egg Vegetable Toast is now complete!
Step 21
Voilà! Here is your complete, nutrient-packed Egg Vegetable Toast. I’m sure your husband will absolutely love it. Enjoy your meal!
