Delicious Tuna and Bell Pepper Pancakes
A delightful pan-fried dish featuring tuna stuffed inside bell peppers. It’s a perfect, flavorful meal or side dish.
Main Ingredients- 2 Bell Peppers (use a variety of colors for visual appeal)
- 2 Cans of Tuna (drained of excess oil)
- 1 Egg
Cooking Instructions
Step 1
First, wash the bell peppers thoroughly. Cut off the tops and remove the seeds. Chop the bell pepper into large pieces, about 2-3 cm in size. Don’t discard the cut tops or the inner membranes; finely mince them to use as part of the filling. Finely mince the carrot as well, similar to the bell pepper scraps.
Step 2
In a bowl, combine the drained tuna, the finely minced bell pepper scraps, the minced carrot, pancake mix, and the egg. Season with a pinch of salt and pepper to your liking. Mix everything together thoroughly to create the filling. Adjust the amount of pancake mix based on how moist the ingredients are; the mixture should be cohesive and not too wet. It should hold together when pressed.
Step 3
Now, heat a pan over medium heat and add a generous amount of cooking oil. Place the large bell pepper pieces onto the hot pan. This method helps to maintain the shape of the bell peppers while frying.
Step 4
Carefully spoon the prepared tuna filling into the center of each bell pepper ring. Press the filling down gently to ensure it’s packed tightly and won’t spill out during cooking.
Step 5
Reduce the heat to medium-low to prevent the filling from burning. Cook until one side is golden brown and nicely seared. Then, using a spatula, carefully flip each bell pepper over and cook the other side until it’s also golden brown and cooked through. Ensure the filling is cooked completely. Your nutritious tuna and bell pepper pancakes are ready to enjoy! They are best served warm.
