Create three delicious and satisfying dishes using tender chicken breast: a hearty sandwich, a fresh salad, and a convenient tortilla wrap! These are perfect for diet meals or packed lunches. They are not only flavorful but also incredibly simple to make.

- Bread slices 4
- Onion 150g
- Carrot 100g
- Cheddar cheese 4 slices (2 for sandwich, 2 for tortilla wrap)
- Butter 2 Tbsp
Chicken Breast Salad Dressing- Mayonnaise 4 Tbsp
- Honey mustard 2 Tbsp (2 Tbsp for sandwich, 2 Tbsp for tortilla wrap)
- Parmesan cheese powder 1 Tbsp
- Pepper to taste

- Baby greens 60g
Sweet and Sour Pickled Onion Dressing- Sugar 1 Tbsp
- Vinegar 2 Tbsp
- Salt 1 tsp
- Mayonnaise 4 Tbsp
- Honey mustard 2 Tbsp (2 Tbsp for sandwich, 2 Tbsp for tortilla wrap)
- Parmesan cheese powder 1 Tbsp
- Pepper to taste

Sweet and Sour Pickled Onion Dressing- Sugar 1 Tbsp
- Vinegar 2 Tbsp
- Salt 1 tsp
- Sugar 1 Tbsp

Cooking Instructions
Step 1
1. Place the chicken breast in a pot and add enough water to cover it completely. Bring to a boil over high heat. 2. Once boiling, turn off the heat and remove the chicken breast. Rinse it under cold running water. 3. Return the chicken breast to the pot, add enough water to cover it again, and bring to a boil over high heat. 4. Reduce the heat to medium-low and skim off any foam that rises to the surface. 5. Partially cover the pot with a lid, leaving a small gap for steam to escape, and simmer for about 20 minutes until the chicken breast is tender.
Step 2
Carefully remove the cooked chicken breast from the pot. Don’t discard the cooking liquid! It’s excellent for adding depth of flavor to soups, stews, or other dishes.
Step 3
Here we have 250g of tender, cooked chicken breast ready. You can shred it with a fork or dice it into bite-sized pieces, as you prefer.
Step 4
We’ll be adding some carrot to the chicken breast mixture for the sandwich. Instead of finely mincing it, julienning the carrot will provide a pleasant texture. If you prefer a softer texture, you can microwave the carrot briefly after julienning it.
Step 5
Thinly slice the onion. In a small bowl, combine the sliced onion with 1 Tbsp sugar, 2 Tbsp vinegar, and 1 tsp salt. Gently mix and knead with your hands for a minute. Let it pickle for about 10 minutes. After pickling, squeeze out any excess liquid. This process reduces the onion’s pungency and enhances its sweet and sour flavor with a crisp texture.
Step 6
In a large bowl, combine the shredded or diced chicken breast, julienned carrots, and the squeezed pickled onions. Add 4 Tbsp mayonnaise, 2 Tbsp honey mustard, 1 Tbsp grated Parmesan cheese, and a pinch of pepper. Mix everything together thoroughly until well combined to create the chicken breast salad filling.
Step 7
Now it’s time to toast the bread for the sandwich. Melt 1 Tbsp of butter in a pan over medium-low heat. Place the bread slices in the pan and toast one side until golden brown and slightly crispy.
Step 8
Toast the other side of the bread without butter. Assemble the sandwich so that the unbuttered side faces outwards. This prevents your hands from getting greasy while eating. Tip: Lightly toasting the edges of the bread first can help prevent the sandwich from falling apart when you wrap it.
Step 9
Stand the toasted bread slices upright to maintain their crispiness. This prevents them from becoming soggy.
Step 10
Place one slice of toast with the buttered side facing up. Layer it with 2 slices of cheddar cheese, followed by a generous amount of the chicken breast salad filling. Top with the remaining slice of bread to complete your delicious chicken breast sandwich!
Step 11
Let’s make the chicken breast tortilla wrap! Take a 20cm tortilla and spread 1 Tbsp of honey mustard sauce evenly over one side. Place 2 slices of cheddar cheese on top. Arrange fresh baby greens and thinly sliced tomato attractively. Generously spoon the chicken breast salad filling over the vegetables. Fold in the sides of the tortilla slightly, then roll it up tightly from the bottom. Your delicious chicken breast tortilla wrap is ready!

Wrap the finished tortilla wrap securely in parchment paper or plastic wrap, then slice it in half. This makes it easier to eat and prevents the filling from spilling out. The addition of crisp baby greens adds a wonderful texture and makes it incredibly tasty.
