Easy and Delicious Broccoli Tofu Salad Recipe
Broccoli tofu salad is a dish I often make for my children. Since broccoli isn’t an overpoweringly flavored vegetable, pairing it with savory and creamy tofu creates a healthy and delightful meal. This recipe is perfect for picky eaters and offers a wonderfully mild flavor and satisfying texture.
Main Ingredients- 1/2 head broccoli
- 1/2 block firm tofu
Cooking Instructions
Step 1
Wash the broccoli thoroughly. Cut it into florets by following the natural lines of the stem. Also, trim and use the smaller side shoots and leaves for added nutrition.
Step 2
Cut the tofu into bite-sized cubes, about 2-3 cm. Be careful not to cut them too small, as they might crumble easily when mixed.
Step 3
In a bowl, combine 1 cup of cold water with 1 Tbsp of vinegar. Soak the broccoli florets for about 5 minutes to remove any impurities. Afterwards, rinse them under running water two to three times and gently pat them dry.
Step 4
Bring a pot of water to a boil. Once boiling, add 1/2 Tbsp of salt to the water. (This helps the broccoli retain its vibrant green color).
Step 5
Add the prepared broccoli to the boiling water and blanch for a very short time, between 40 seconds to 1 minute. Overcooking will make it too soft, so aim for a slightly crisp texture.
Step 6
In another pot, boil some water. Add the cubed tofu and blanch for about 1 minute. (This step helps to remove any raw tofu smell and firm up the texture slightly).
Step 7
Drain the blanched tofu and allow it to cool. You can also place it on a clean kitchen towel or cheesecloth to thoroughly press out excess water. Ensuring the tofu is dry is key for the dressing to absorb well.
Step 8
In a large mixing bowl, combine the drained tofu and blanched broccoli. Add all the seasoning ingredients: 1/2 Tbsp Guk-ganjang, 1 Tbsp sesame oil, 1/2 tsp minced garlic, 1 Tbsp vinegar, and 1/2 Tbsp salt.
Step 9
For enhanced nutty flavor, lightly crush or rub the toasted sesame seeds between your palms before adding them. This will significantly boost their aroma and taste.
Step 10
Gently mix all the ingredients and seasonings together with your hands. Be careful not to overmix or mash the ingredients, especially the tofu and broccoli, to maintain their texture.
Step 11
