First, soak the dried seaweed (20g) in plenty of cold water for about 15-20 minutes until fully rehydrated. Rinse the rehydrated seaweed several times under clean water to remove excess salt, then squeeze out any remaining water.

Cut the squeezed seaweed into bite-sized pieces, about 2-3 cm in length. In a pot, combine the cut seaweed, beef (250g), and perilla oil (2 Tbsp). Gently mix everything together with your hands, like kneading dough. This marinating step allows the flavors to penetrate the ingredients evenly, resulting in a deeper taste.

Place the marinated seaweed and beef in the pot and stir-fry over medium heat. Cook until the beef is lightly browned. Add the soy sauce for soup (2 Tbsp) and continue to stir-fry. Adding soy sauce at this stage greatly enhances the umami of the Miyeokguk. The beef doesn’t need to be fully cooked at this point. Next, pour in 2L of water and bring to a boil over high heat.

Once the soup starts boiling, reduce the heat to medium and add a pinch of ground black pepper. Then, season with 1 tsp of salt. Adjust the saltiness by adding more if needed. Leave the lid off and let it simmer vigorously for 10 minutes, allowing the flavors of the seaweed and beef to infuse into the broth.

While the Beef Miyeokguk is simmering, prepare the ground perilla seeds (50g). When the soup is almost ready, stir the prepared ground perilla seeds into the pot, ensuring they are well dispersed.
