Cooking Instructions
Step 1
Before you begin cooking, prepare all your ingredients thoroughly. Wash the zucchini under running water, pat the perilla leaves dry, and arrange them neatly. If using the red chili for garnish, remove the seeds and finely mince or thinly slice it.

Place the zucchini in a steamer basket over boiling water and steam for about 5 minutes until ‘tender-crisp’. Be careful not to overcook it, as it can become mushy. The key is to steam it just enough so it’s tender but still retains a slight bite. Let the steamed zucchini cool slightly.

While the zucchini is steaming, prepare the accompanying vegetables. Fold each perilla leaf in half lengthwise, then stack them and thinly slice them into fine julienne strips. For the red chili, remove the seeds and finely mince it, or slice it thinly to create pretty garnishes.
