First, it’s crucial to remove the blood from the pork ribs. Soak the pork ribs in cold water for at least 3 hours, changing the water a few times during this period. Properly draining the blood is key to eliminating any gamey smell and achieving a clean flavor.

In a large bowl, combine 10 tablespoons of soy sauce, 2 tablespoons of honey, 2 tablespoons of sugar, 2 tablespoons of cooking wine, 2 tablespoons of minced garlic, 5 shakes of black pepper, and 1 teaspoon of ginseng extract (if using).
