Main Ingredients- Black soybeans (Seoritae) 100g
- Garlic 1 clove
- Dried chili pepper 1/2 piece
- Ginger 1/4 piece
Seasoning Ingredients- Soy sauce 1 Tbsp
- Corn syrup 1 tsp
- Sesame oil to taste
- Toasted sesame seeds to taste
- Sugar 1/2 Tbsp
- Soy sauce 1 Tbsp
- Corn syrup 1 tsp
- Sesame oil to taste
- Toasted sesame seeds to taste
- Sugar 1/2 Tbsp
Cooking Instructions
Step 1
First, prepare the aromatics that will enhance the flavor of the black bean dish. Thinly slice the garlic. Roughly chop the dried chili pepper and remove the seeds. This preparation will infuse a fragrant aroma into the beans as they simmer.
Step 2
In a pot, combine 100g of thoroughly washed black soybeans and 1.5 cups (about 300ml) of water. Bring this mixture to a boil over high heat with the lid off.
Step 3
Once the water starts boiling vigorously, reduce the heat to low. Add the pre-sliced ginger, garlic slices, and chopped dried chili pepper to the pot with the beans. Simmering them together will help eliminate any ‘beany’ smell and add a wonderful fragrance.
Step 4
As the beans begin to soften, add the braising liquids. Stir in 1 Tbsp of soy sauce, 1/2 Tbsp of sugar, and 1 tsp of corn syrup. Continue to simmer over medium-low heat, stirring occasionally to prevent the beans from sticking to the bottom of the pot, allowing the flavors to meld beautifully.
Step 5
Once the beans have reached your desired tenderness and the sauce has thickened, skim off any foam that rises to the surface. This will result in a cleaner, glossier finish. Just before turning off the heat, drizzle in a little sesame oil and sprinkle with toasted sesame seeds for a final touch of nutty aroma. Your delicious Kongjaban is now ready!
