Soybean Sprout Rice Ingredients- 300g fresh soybean sprouts
- 3 cups short-grain rice (or mixed grains)
- 3 Tbsp cooking water (slightly less than usual)
- 1/2 cup soy sauce (or soup soy sauce)
- 1 Tbsp minced garlic
- 1 tsp Gochugaru (Korean chili flakes, fine powder)
- 1 tsp sugar
- A pinch of toasted sesame seeds
- 1 tsp sesame oil
- 1 Cheongyang chili pepper (optional, for spiciness)
- 1 handful of the white part of green onions
Cooking Instructions
Step 1
Today, I’ll show you how to make soybean sprout rice using an electric rice cooker, which anyone can easily follow. It’s simple yet makes for a very hearty meal.
Step 2
First, wash the rice thoroughly and let it drain in a colander. Rinse the soybean sprouts several times under running water to remove any dirt or impurities, then drain them. If you dislike the grassy smell of soybean sprouts, you can wash them by gently shaking them with a little coarse salt.
Step 3
Place the washed rice in the rice cooker. Use about 10-15% less water than you normally would for cooking rice, as the soybean sprouts will release moisture, preventing the rice from becoming too mushy. Evenly spread the rinsed soybean sprouts over the rice, ensuring they cover the rice grains. Now, press the ‘Cook’ button on your rice cooker. You can use the standard white rice cooking mode.
Step 4
While the rice is cooking, let’s make the delicious seasoning sauce. In a small bowl, combine 1/2 cup of soy sauce, 1 Tbsp of minced garlic, 1 tsp of Gochugaru, and 1 tsp of sugar. Add a generous pinch of toasted sesame seeds and 1 tsp of sesame oil. Finely mince the Cheongyang chili pepper and add it. Slice the white part of the green onions thinly and add them for extra aroma. Mix all the ingredients well to create the seasoning sauce.
Step 5
Once the rice is cooked, open the rice cooker lid and gently mix the rice and soybean sprouts with a rice paddle. Be careful not to mash the sprouts. Alternatively, you can steam the soybean sprouts on top of the cooked rice, and then gently mix them with the seasoning sauce just before serving. You can choose to mix the rice and sprouts beforehand or serve the sauce on the side according to your preference.
