Main Ingredients- 1/2 head broccoli (approx. 150g)
- 1/2 medium potato
- 1/2 medium onion
- 2-3 cloves garlic, minced (or 2-3 thinly sliced cloves)
- 200ml milk (or soy milk, for consistency)
- 2 Tbsp olive oil
- Salt to taste
- Black pepper to taste
Cooking Instructions
Step 1
First, thoroughly wash the broccoli under running water. For extra peace of mind, you can soak it in water with a splash of vinegar for about 5-10 minutes.
Step 2
Separate the broccoli florets from the stem. Peel the stem and cut it into small, 1cm pieces. Cut the florets into larger, bite-sized pieces of about 2-3cm.
Step 3
For a pleasant texture, chop the broccoli stems into small 1cm pieces, while keeping the nutrient-rich florets in larger 2-3cm chunks. Separating them helps ensure even cooking.
Step 4
Peel the potato and cut it into thick matchsticks, about 0.5cm wide. Slice the onion into similar thick matchsticks. Thinly slice the garlic cloves.
Step 5
Cut the potato into thick matchsticks, about 0.5cm wide. If they’re too thin, they might break down too much during cooking. Slice the onion similarly for added sweetness, and thinly slice the garlic for aroma.
Step 6
Prepare the potato by cutting it into thick 0.5cm matchsticks and the onion into similar sized slices. Thinly slicing the garlic will bring out its natural flavor and complement the other ingredients beautifully.
Step 7
Heat a pot or deep skillet over medium heat. Add olive oil and sauté the sliced garlic over low heat until fragrant, being careful not to burn it. Once the garlic aroma is released, add the sliced onion and cook until it becomes translucent.
Step 8
When the onions start to turn translucent, add the julienned potatoes and the chopped broccoli stems. Season lightly with salt and pepper to enhance the flavors. Sauté for about 3-5 minutes.
Step 9
Once the potatoes begin to soften and look slightly translucent, add the broccoli florets. Stir and cook for just another 1-2 minutes. Overcooking at this stage can cause the broccoli to lose its vibrant color.
Step 10
Pour enough water into the pot to cover all the ingredients. Bring to a boil over medium-high heat, then reduce to medium-low, cover, and simmer for 10 minutes, or until the potatoes and broccoli are tender.
Step 11
Let the soup cool slightly, then transfer it to a blender or use an immersion blender to puree until smooth and creamy. Return the puréed mixture to the pot and heat gently over low heat. Stir in milk or soy milk until you reach your desired consistency. Taste and adjust seasoning with salt if needed. Your soup is ready!
Step 12
Carefully ladle the finished broccoli soup into serving bowls.
Step 13
For a final touch, garnish with a sprinkle of crumbled feta cheese and some crunchy toasted walnuts. This adds a delightful texture and extra flavor! Enjoy your delicious homemade broccoli soup!
