Nutritious and Colorful Tofu Pancakes
Healthy and Delicious Tofu Dish
A recipe for tasty and healthy tofu pancakes using vegetables from your fridge.
Main Ingredients- 1/2 block Tofu (approx. 150g)
- 1/4 Zucchini
- 1/4 Bell Pepper (use various colors for a vibrant look)
- 1/4 Carrot
- 1 Egg
Basic Seasoning- Pancake Salt to taste (or regular salt)
- Pinch of Black Pepper
Sweet and Sour Soy Sauce Dip- 2 Tbsp Soy Sauce
- 1 Tbsp Vinegar
- 1 Tbsp Oligosaccharide (or corn syrup)
- A little chopped Green Onion
- Pancake Salt to taste (or regular salt)
- Pinch of Black Pepper
Sweet and Sour Soy Sauce Dip- 2 Tbsp Soy Sauce
- 1 Tbsp Vinegar
- 1 Tbsp Oligosaccharide (or corn syrup)
- A little chopped Green Onion
Cooking Instructions
Step 1
Squeeze out as much water as possible from the tofu using a cheesecloth or paper towels. Pressing it with the back of a knife helps. This step is key to making crispy, non-oily tofu pancakes.
Step 2
Transfer the drained tofu to a bowl and mash it with a fork or your hands. Breaking it down makes it easier to mix with other ingredients.
Step 3
Wash the zucchini, carrot, and bell pepper, remove seeds, and finely dice them. Feel free to use other vegetables you have on hand like onions or mushrooms. Finely dicing the vegetables makes them more appealing, especially for children.
Step 4
Add the diced vegetables, 1 egg, pancake salt, and a pinch of black pepper to the mashed tofu. Mix and knead thoroughly until well combined. Adjust the saltiness to your preference.
Step 5
Heat a non-stick pan over medium-low heat and add about 1 tablespoon of cooking oil. Spoon about 1 tablespoon of the tofu mixture per pancake onto the hot pan, flattening them slightly into small, round shapes. Be careful not to overheat the pan, as they can burn quickly.
Step 6
Cook for about 3-4 minutes per side, or until golden brown and slightly crispy. Ensure the tofu and vegetables are cooked through. Once done, place the cooked pancakes on a paper towel-lined plate to absorb any excess oil. Arrange them nicely on a serving dish.
Step 7
In a small bowl, whisk together 2 tablespoons of soy sauce, 1 tablespoon of vinegar, 1 tablespoon of oligosaccharide, and a little chopped green onion. For a touch of heat, you can add a pinch of red pepper flakes. This dipping sauce complements the savory tofu pancakes beautifully.
