Main Ingredients- 80g radish (thinly sliced)
- 70g rice (1 serving, half a rice cup)
- 100g fresh oysters
- 1 dried shiitake mushroom
- 250g water (or slightly less than the 1-serving mark in your rice cooker)
- 1 tsp flour (for washing oysters)
Oyster Rice Seasoning Sauce- 4 Tbsp soy sauce
- 1 tsp toasted sesame seeds
- 1 tsp sesame oil
- 1 tsp red pepper flakes
- 2 handfuls chopped green onions
- 1/2 Tbsp garlic powder (or minced garlic)
- 2 tsp sugar
- 1 cheongyang chili pepper (finely chopped)
- 4 Tbsp soy sauce
- 1 tsp toasted sesame seeds
- 1 tsp sesame oil
- 1 tsp red pepper flakes
- 2 handfuls chopped green onions
- 1/2 Tbsp garlic powder (or minced garlic)
- 2 tsp sugar
- 1 cheongyang chili pepper (finely chopped)
Cooking Instructions
Step 1
First, prepare 70g of rice (about half a rice cup for one serving) and rinse it thoroughly. Place the rinsed rice in the rice cooker and add about 250g of water, filling it slightly below the 1-serving line. (The amount of water may vary slightly depending on the type of rice or how long it has been soaked. If you prefer firmer rice, use a little less water.)
Step 2
Soak 1 dried shiitake mushroom in lukewarm water, then thinly slice it and add it to the rice cooker along with the rice. The deep flavor of the shiitake mushroom will further enrich the taste of your oyster rice.
Step 3
Thinly slice 80g of radish and spread it evenly over the rice and water in the rice cooker. (If you’d like to add more umami, you can also add a piece of dried kelp on top.)
Step 4
Coat 100g of fresh oysters with 1 teaspoon of flour and gently mix. The flour helps to absorb impurities from the oysters, making them clean.
Step 5
Rinse the oysters coated with flour several times under cold running water. Rinse them gently to avoid breaking them, so they maintain their shape beautifully when cooked.
Step 6
Carefully place the 100g of cleaned oysters on top of the radish. Now, cook the rice using your rice cooker’s ‘Quick Cook’ or ‘Regular Cook’ setting.
Step 7
While the rice is cooking, let’s make the delicious seasoning sauce. In a bowl, combine 4 Tbsp soy sauce, 2 handfuls of chopped green onions, 1 tsp red pepper flakes, 1 finely chopped cheongyang chili pepper, 1/2 Tbsp garlic powder (or minced garlic), 1 tsp toasted sesame seeds, 2 tsp sugar, and 1 tsp sesame oil. Mix them all together evenly. (Note: For one serving of oyster rice, about 1 tablespoon of this sauce is perfect when mixed in. If you only want to make a small amount, halve all the sauce ingredients listed above. Any leftover sauce can be stored and used for dipping pancakes or in noodles.)
Step 8
Once the rice is cooked, open the rice cooker lid and gently mix the rice and oysters from bottom to top using a spatula, being careful not to break the oysters. The key is to mix them thoroughly while keeping the rice grains intact.
Step 9
Serve the finished oyster rice in a bowl, add a generous spoonful of the prepared seasoning sauce, and mix well before eating! For an extra burst of flavor, you can sprinkle some dried seaweed flakes on top or wrap it in fresh seaweed sheets.
