Main Ingredients
  • 12 Shiitake mushrooms (choose fresh and plump ones)
  • 1/2 cup Onion (finely chopped)
  • 1/2 cup Ground beef
  • 1/2 cup Ground pork
  • A little starch (potato or cornstarch) for lightly coating the mushrooms

Braising Sauce
  • A pinch of salt
  • A pinch of pepper
  • 1/2 Tbsp Oyster sauce
  • 1 cup Water
  • 3 Tbsp Soy sauce
  • 1 Tbsp Mirin (rice wine)
  • 1 Tbsp Sesame oil
  • 1 tsp Sugar
  • 1 tsp Corn syrup (for gloss and sweetness)

Cooking Instructions

Step 1

First, prepare the 12 shiitake mushrooms. Gently wipe them clean with a damp cloth or dry paper towel to remove any dirt. Trim off the tough stems with a knife. You’ll be using the mushroom caps.

Step 2

In a bowl, combine the ground beef (1/2 cup) and ground pork (1/2 cup). Add the finely chopped onion (1/2 cup), a pinch of salt, a pinch of pepper, and 1/2 Tbsp of oyster sauce. Mix everything together and knead the mixture with your hands until it becomes cohesive and slightly sticky. This will ensure the filling holds its shape.

Step 3

Lightly coat the inside of each shiitake mushroom cap with starch. This helps the meat mixture adhere better and prevents the braising liquid from becoming too cloudy.

Step 4

Carefully fill the inside of each shiitake mushroom cap with the prepared meat mixture. Press it in gently to ensure it’s well-packed.

Step 5

Now, let’s make the delicious braising sauce. In a pot or deep pan, combine 1 cup of water with 3 Tbsp of soy sauce, 1 Tbsp of mirin, 1 Tbsp of sesame oil, 1 tsp of sugar, and 1 tsp of corn syrup. Stir well until all ingredients are dissolved.

Step 6

Gently place the stuffed shiitake mushrooms into the braising sauce. Ensure the mushrooms are submerged in the liquid so they cook evenly.

Step 7

Reduce the heat to medium-low. Cover the pot and let it simmer for about 15-20 minutes, or until the mushrooms are tender and cooked through. During cooking, occasionally open the lid and spoon some of the braising liquid over the mushrooms. This will help them absorb the flavor and give them a beautiful glossy finish.

Step 8
