Ingredients- 1 handful dried seaweed
- 5 small-sized abalones
- 2 Tbsp sesame oil
- 1 Tbsp soup soy sauce (guk-ganjang)
- Salt to taste

Step 1
The secret to delicious soup starts with fresh ingredients! We purchased 5 three-year-old abalones from the local market; though small, they are packed with flavor.
Step 2
Properly preparing the abalone is key. First, scrub the shell and meat vigorously with a toothbrush to remove any dirt or grit. Then, firmly rub the center of the shell to create a slight score, which makes it easier to separate the meat. Once cleaned, detach the abalone meat from its shell.
Step 3
Soak the dried seaweed in cold water until it becomes soft and pliable. One handful of dried seaweed is usually enough for about 2-3 servings. Rinse the rehydrated seaweed several times in clean water and then drain it.
Step 4
Slice the prepared abalone into bite-sized pieces, suitable even for children. Place the sliced abalone in a pot with 1 Tbsp of sesame oil and sauté over medium heat. This step enhances the abalone’s savory flavor. (Tip: To avoid making the abalone tough, only sauté until its surface turns opaque.)
Step 5
Add the drained seaweed to the same pot with the remaining 1 Tbsp of sesame oil. Stir-fry for about 1-2 minutes. This process removes any fishy smell from the seaweed and adds a nutty aroma.
Step 6
Once the seaweed is well-sautéed, pour in enough water to make the soup and bring it to a boil. You don’t need a separate broth; the abalone and seaweed themselves create a rich flavor. Once the water boils, add the pre-sautéed abalone and continue to cook together.
Step 7
Now, it’s time to season! Add 1 Tbsp of soup soy sauce first, and then adjust the saltiness with additional salt, according to your preference. Skim off any foam that rises to the surface while simmering for a clearer broth. Enjoy your warm and nutritious abalone seaweed soup!
