Nutritious Abalone Rice Cooked in a Pot
Abalone Pot Rice Recipe Made with Fresh Abalone
Try making delicious and nutritious abalone pot rice using fresh abalone ordered for early morning delivery. The combination of chewy abalone and savory internal organs sauce is exquisite, and when mixed with the seasoning sauce, it becomes a fantastic nourishing meal. Easily prepare a wonderful meal in your rice cooker.
Main Ingredients- 8 live abalones
- A small amount of carrot, julienned
- 1 Tbsp sesame oil
- 3 servings of soaked rice
Seasoning Sauce- 2 Tbsp soy sauce
- 1 Tbsp sesame oil
- A small amount of minced green onion
- A pinch of sesame seeds
- 2 Tbsp soy sauce

Cooking Instructions
Step 1
For the fresh abalones, carefully insert a spoon between the shell and the meat, and separate the meat using leverage. It’s important to hold the abalone firmly to prevent slipping.
Step 2
Separate the internal organs from the meat and carefully remove the hard teeth at the mouth part with a knife. Removing the teeth will result in a much softer texture.
Step 3
Rinse the cleaned abalone thoroughly using a kitchen brush. Julienne half of the abalone meat (excluding the side attached to the shell) and score the other half. Scoring makes the abalone look beautiful and become even more tender when cooked.
Step 4
Place the julienned abalone meat in a pan, drizzle with 1 Tbsp of sesame oil, and stir-fry over medium heat until lightly browned. Sautéing until fragrant brings out the abalone’s flavor.
Step 5
To remove any gaminess and enhance savoriness, stir-fry the abalone internal organs separately in a pan with a little sesame oil over low heat. It’s important to sauté them until their rich flavor is well developed.
Step 6
Transfer the sautéed abalone internal organs to a blender and purée until smooth. You can add a little water to help with blending. This internal organ sauce will add wonderful depth to the rice.
Step 7
In your rice cooker, add the pre-soaked rice. Top with the julienned carrots and sautéed abalone meat. Pour the puréed abalone internal organ sauce over everything and add water to the usual level for cooking rice. Adjust the water amount considering the saltiness of the internal organ sauce.
Step 8
Gently stir the ingredients in the rice cooker to mix evenly. Cook over high heat for about 15 minutes. Once the water starts boiling, lift the lid and stir gently once more to prevent the rice from clumping.
Step 9
Once the water has mostly evaporated, reduce the heat to low. Arrange the scored abalone pieces attractively on top of the rice. The scored abalone will cook during the steaming process, making it look even more appetizing.
Step 10
Continue to cook over low heat for another 10 minutes, then turn off the heat and let it steam, covered, for 5-10 minutes. This steaming process allows the rice to become fluffy and fully absorb the abalone’s flavor.
