  • 5 Fresh Shiitake Mushrooms
  • 1/2 block Firm Tofu
  • 2 Chinese Yams (also known as Nagaimo or Shan Yao)
  • 1 Tbsp Soy Sauce for Soup (Guk-ganjang)
  • 1 Tbsp Minced Garlic
  • 1 Tbsp Fermented Shrimp Paste (Saeu-jeot)
  • 2 handfuls Green Onions, thinly sliced

Cooking Instructions

Step 1

First, prepare a rich and savory broth by simmering anchovies, kelp, dried shiitake mushrooms, and dried shrimp. (Alternatively, you can use a pre-made broth pack for convenience.) Make sure to have about 1.2 liters ready.

Slice the shiitake mushrooms into bite-sized pieces, not too thick. Peel the Chinese yams and cut them into approximately 1.5cm cubes. Cut the tofu into cubes of a similar size to the yams, so they blend well in the soup.

Pour the prepared 1.2L of anchovy and kelp broth into a pot. Add 1 Tbsp of soy sauce for soup to give the broth a nice color. Then, add the minced garlic and the cubed Chinese yams. Cook until the yams are tender. Once the yams are almost cooked, add the tofu and shiitake mushrooms and continue to simmer. Season with 1 Tbsp of fermented shrimp paste to enhance the savory flavor. Finally, add the two handfuls of thinly sliced green onions. Skim off any foam that rises to the surface for a cleaner broth. Your nutritious and delicious Yam and Mushroom Soup is now ready!
